Do You Like Fried............................................?

Do you like fried corn? It always reminds me of summer as Mother always fixed it during summer time. How do you fix yours and do you like it? My recipe is simple, a couple of tablespoons of real butter melted with a couple of tablespoons of sugar and cook it up a bit and then add the cut corn off the cob, cook a few minutes until the corn is no longer milky looking. Before serving add some salt and pepper. Summertime good!

Honest, I no longer like anything fried. quit eating fried a few years ago, cause of high cholesterol.

Well, not totally, I almost forgot, I do sneak an order of french fries in ever so often. ;)

Love corn fritters. Same as Marilyn's, except just enough milk and flour to shape a fritter.

Thanks again, you guys. I do feel blessed to live in a great climate and have the ability to grow these treasures. It's worth every effort. You know, I have 2 little girls and it's still possible to grow with a furvour. That's the beauty of xeric plants... they can wait. Teach him how to mist and pollinate.

For years I didn't care for potato chips or French fries though I liked potatoes prepared other ways, but the past few years there are times I crave them now. It's a combination of the oil/grease & salt. Rather than a certain food, I find that I now like specific dishes a lot more than I used to: stews, pot roast, sauerkraut, sausage, biscuits & gravy (notice the interest in heavy fat foods?) A kind of sad thing, I LOVED chocolate to the point of once buying & eating a whole BOX of Hershey's bars, & going to chocolate conventions for a few years. Now I've lost my taste for chocolate; I don't hate it, but I don't care if I have it or not, & when I do have a piece, it doesn't taste all that great. Calories I don't have to worry about, I suppose. It's also given me empathy for older people who have lost their taste for food.

When I fry anything, I use self rising flour....or you could add a little bit of baking powder. The baking powder will make the crust lighter and crisper. I use flour...and an egg wash...and the meat that I use would either be cube steak or just tenderized round steak. That is my preferred way to fry anything...except chicken, I use buttermilk. I even fry oysters in flour now, since I don't like the grittiness of corn meal. Cracker meal is good for oysters though....also fish.

If they are bare root, one would assume that the roots are properly wrapped for shipping, but that depends on the quality of the vendor. In which case, you only need to keep the shrubs' roots covered/wrapped and cool. Otherwise you can wrap the roots in wet newspapers, heel into a mulch or compost temporarily or pot up in a container. Just continue to keep the plants cool (but above freezing) as warm temps will encourage them to break dormancy.

Never heard of fried corn until a few weeks ago on the cooking forum. Had to try it. The whole family loved it. I don't really consider it "fried" in the true sense of the word.

I love fried corn. I prefer it to corn on the cob and usually end up stripping the ears to fry it. I make mine the way Marilyn does, but use less sugar.

MY brother's favorite food in the world is corn fritters. As much as I like corn, I do not like corn fritters.

Fried corn is so good. It's not really fried, but Moni wouldn't eat Harry's version. LOL! Needless to say, once a year is about all we have this yummy treat. Here's his version:

6 ears of corn
Bacon grease
Cream
Butter
S & P

Scrape corn from cob and then, with a sharp knife, scrape the "milk" off the cob. Melt bacon grease in skillet, add corn and corn milk and stir until coated and corn cooks a little. Add cream and continue stirring until corn is done. Add butter, salt and pepper and stir until melted.

Wouldn't Paula Deen be proud ;-)

I often like to husk my corn on the cob, brush with melted butter and grill it, turning so the kernels on each side get golden. I imagine that tastes much the same as your fried corn does. It definitely adds to the flavor. YUM!.

Azzalea, fried corn--at least the kind we make isn't golden at all--more like thick creamed corn.

As I was reading this and remembering how good fried corn is, I came to "Harry's version" which is the way my DM (and I) made it. Thank you Patti43. Sure made me hungry. I don't have any corn, but I'm going to the store tomorrow. Yummy!

Never had it but it sure sounds yummy! Is that uncooked or cooked corn on the cob before you "fry" it. My mom use to make corn fritters when I was a kid. We served it with maple syrup or honey even at dinner. I haven't made any in years. I use to love them.

Aptosca, usually it is raw corn, but if you have left over corn on the cob you can do the same thing, just not cook very long since the corn is already cooked. You can adjust the amout of ingredients for the amount of corn you have.

I agree with Patti...it's not really fried, I don't know why they call it fried except you put a big dollop of butter or bacon drippings in a skillet and stir it up with the corn and cook it slowly until it is nice and done and it's juicy and creamy. It really is more like the creamed corn most people know than anything fried. I didn't grow any corn this year but I put a whole bunch in the freezer to use when the fresh is gone. I cut if off the cob so I can fry it...

The creamed corn I think of has cream or milk, some flour and the butter and sugar, very good. Rather like creamed peas. Sure good summer vegetables.

Sue, scraping the cob gets the "milk" out of it which naturally thickens the corn. So it takes just a little cream to thin out the corn if you need to--and we usually do.
