I'll be the odd (wo)man out here. I love to cook, but I've been doing since I was 11 yrs old, and frankly cooking 7 days a week is drudgery. Add in breakfast and/or lunch and it's a pain. I loved my career and it wasn't unusual to be gone 12-13 hrs, 5 days/wk. Weekends were crammed with errands and family/friends. We are fortunate to live in one of the greatest restaurant areas in the world: the San Francisco Bay Area. There is great food at all price points. You can eat for $5 or $500, but either way you could eat well -- check out NYTimes' Seth Kugel's visit last month to Portland, where he gave himself an $8/meal budget and was wowed by the amazing meals he got from the local food trucks. When I worked it wasn't unusual for us to go out 4-5x/wk. The question was, "What country do you want to eat today?" We could do Chinese, Japanese, Vietnamese, Thai, Cal-Mex, American, Moroccan, Korean, French, Italian, Burmese, Greek, and more - all within 1 mile walk, and usually several iterations of each one (you couldn't even count how many Chinese restaurants of various regionalities there were). Now we're retired. We have both money and time. When I feel like cooking, I make the dishes that took too much time when I was working - long slow braises or slow-roasting, or dishes that just require an enormous amount of prep. But we still go out 3-5x/wk, When we travel around the area as we like to do (we just got back from Napa last week and will be in Sonoma next month), we travel specifically to eat. In Napa, we had amazing, elegant, fabulous Cal-French food that I would never bother cooking in a million years. There were brilliant combinations, such as the black cod served with a seafood sabayon, roasted matsutake mushrooms, and the tiniest perfect baby turnips that had no bitterness at all. Or an amazing carpaccio, dressed with nothing but a touch of Meyer lemon EVOO. I cook when I want to, but dining out is simply more fun. No shopping, no prep, no dirty dishes, no leftovers, no fuss. Yes, I could grow my own piquillo peppers and buy Ceylon cinnamon -- but why? I'd rather go to the great Spanish tapas restaurant a few minutes away and have them roast, skin and stuff the peppers with fresh chevre; roast, skin and sprinkle the cinnamon on fresh beets; and make that perfect paella 'tradicionale" for my spouse and the dreamy Fideua Negre, noodle paella with squid ink, for me. I mean, do I seriously want to buy a pressure cooker just for my octopus? Why should I bother cleaning and skinning a cephalopod when there's at least a dozen restaurants that make fabulous smoke-grilled octopus within 5 miles of our house? Should I want to soak the bacalhau in 8 changes of water over two days? It would just be so much easier to go to the Cuban or Portuguese or Italian restaurants, and have a couple of orders of really amazing salt cod fritters or roasted salt cod with polenta, instead! The take-out food these days is so much better quality than before. One place offers a marvelous frozen (bake it at home) chicken pot pie - perfect butter pastry, organic chicken breast and organic vegetables - all they offer is either a fried chicken sandwich on artisanal roll with housemade slaw, or the pot pie. That's it; they open 4 days/wk for 3 hrs a day and then go home to raise their baby daughter. Lines out the door every day. One specialty market with various food sellers (we lust after their pork tomahawk chop - wowie! What a hunk of meat!) has lovely little frittatas with artichoke, red pepper and Gruyere. My DH hates frittatas, so I buy one for myself while he gets the penne with San Marco marinara and Kurobuta pork meatballs; that way we both win. I loathe Food Network. When I write up reviews on the restaurants we've eaten at (I do it for my own archives, not to publish them), I often refer negatively to "Food Network chefs" - cooks who slop the food out as fast as possible, in ridiculous combinations of too many ingredients. They don't know the difference between a sauce Amoricaine and a Bordelaise. Bleh. It's taken me decades to get my DH off the crappy food he grew up with. But he's finally come around, so that when we drop $$$$ on the perfect dinner at Etoile or Spoonbar or La Folie, he says, "That was absolutely worth every penny." And you know, it is. This thread, which I didn't catch the first time around, made me think. In general, I cook to eat and feed my family. However, I do enjoy baking for special occasions. I think that if I didn't work outside the home I would cook more...and be more adventurous. But, I work and have a long commute so by the time I get home I have to make fast meals with little time for creativity or major prep work. So, we eat a lot of frozen veggies--as is out of the bag, pre-cooked meats warmed up, pasta, soup, occasionally waffles/pancakes/eggs, potatoes, etc. I.e., for the most part things that I can cook fast. One up side to this is that our meals haven't changed that much w/o a kitchen since we do have a MW, Toaster Oven, and hot plate to cook with! One very big downside to this, though, is that my children are not learning to cook like I did from my mom. Back on topic... After finding this site and reading about zones, I realized that one thing that I really wanted was a baking center. So when my kitchen was being designed I had it in the back of my head that whatever we ended up with had to have an area I could designate my "Baking Zone", preferably near the ovens--with room to roll out dough, spread out cookie sheets, and have cookie cutters spread out all at the same time! The other thing I got from this site was our window...having the window down to the counter (OK, not cooking-related, but a very important design element!) Our very first plan that our KD came up with had input from us...but a very naive/ignorant us! (Before GW...BGW!) Then....I found this site.....and the changes began. Actually, I posted that original plan and asked for help (and also asked my KD to start over w/no island) Many, many people here helped me come up with a plan over several weeks (months?). We finally came up with a plan that has changed little since then. Interestingly, when I took away the island "must have", my KD came up with a plan very similar to what we came up with here. The only 3 differences were (1) no mini peninsula, (2) a 36" pantry cabinet rather than a corner pantry, and (3) no separate Message Center cabinets. My KD wasn't completely happy w/our differences, but she, wisely I thought, told me to go home and mock up what I wanted to see how it would work (same advice I got here!) Well, the mock up was great! It proved that I did indeed want the mini peninsula (I liked it so much I left the mock up in place until demo and used it!) When I told her the results, she didn't argue, she accepted it telling me it's my kitchen, so ultimately it's up to me. So in the end, my design was/is based on what I wanted, not what the KD wanted. [If only someone else had measured my kitchen and she was given more authority, I think a lot of subsequent problems would have been avoided.] Our kitchen isn't done yet, but it's close...so I can't yet tell you how it is going to work for us...but we are so...

It's really hard to suggest something without having some idea of what types of things he likes. My dad was a very fussy eater. When my mother died there was a similar situation. Not motivated is a good way to put it, but let's face it. He's probably still grieving and just doesn't really feel like eating and I assume cooking is a foreign concept to him. I know some people go crazy at the idea of convenience foods but isn't it better than nothing? What about a local deli? Get a rotisserie chicken and some side dishes. Pick up (or make) a turkey breast, small ham, roast or something and have some nice sandwiches. There's some decent canned soups, stews, chili, etc, even canned potatoes, veggies and the like. I take it he never has had to cook for himself? Perhaps therein lies the problem. Too often people try to force someone to make overly fancy "nutritious" meals when it's far better to start slow with something he'll feel confident making for himself. Maybe it's nothing more than a fried hamburger, a bagged salad, some instant potatoes and the like. Then maybe someone can show him how easy it is to take that hamburger, mix it with some cooked pasta, add some tomatoes and seasoning and you have a completely different dish. Then sometime, now that you know how to cook pasta, take some of the leftover chicken, mix it in instead of hamburger, etc. Another thing comes to mind is a crockpot or a Nesco roaster. Pot roast, potatoes, onions, carrots... chicken, or a turkey breast (or drumsticks if he likes dark meat, a small ham. Many people are apprehensive about a microwave. If you know how to use one, they're useful, but I don't rate it as a great cooking appliance. It's a utensil. I think a crockpot, Nesco or even a good set of cookware (non-stick - easy to clean) is a far better investment. But if you go with a microwave, definitely get the dial version. Someone new to cooking will be intimidated by having to program in the software code for Mecroshaft Wanders in order to heat a can of soup! An idea for an appliance that I use a lot is a convection oven. Mine is one of the simple little ones that's like a big glass dutch oven and the heat unit is in the cover. You set it on top and set the time and temp, flip down the handle and you're cooking. This is a mini oven. It bakes fabulous potatoes, makes pizza rolls in 6 minutes, warms things and you put a few quarts of water in it, add a couple drops of dish liquid and turn it on warm for a few minutes and it splashes ir around and pretty much cleans itself. OK, you do scrub it a bit if something is burned on, but especially when it's new it's not a problem and you can always line it with foil. I do that and cook bacon in it. It came with a second level rack to do 2 things but the hot stuff will be on top. I use it on one level. I've been known to use this together with the microwave and the stove to make a meal. One of my points that's maybe getting lost is to sit down and figure out what things he likes and doesn't like. How much time does he have, how much experience he has, etc. Then work on fitting some things in. And the first time you have one part of a plate cold while the other side is overcooked in a microwave, you'll soon quit using a microwave for cooking. Low and slow and you can keep an eye on things. And run less risk of burning, overcooking or failure in general. I'll say from experience, a SIMPLE, home made, or semi-homemade meal is FAR superior than the McDonald's drivethru. Tater tot hotdish may send chills up some peoples' spines but compared to what Mayor McCheese puts out... I'll take tater tots! Another thought, bacon & eggs? Omelets? Fritatta? Even a platter of sausage, cheese, veggie sticks and the like can be an enjoyable meal. There's times I just don't feel like cooking. But I will slice some sausage and cheese. Or take some bagged salad, add some cheese, tear up some deli meats and have a pseudo chef's salad. Especially with summer here pasta salads are good eats. Don't overlook good quality hot dogs or sausage. Brown & serve sausage and eggs, with a side of Simply Potatoes? Another thought for ideas is to look at the TV dinners he's getting. That should give an idea of what he likes. And you're more willing to learn to make something you LIKE than something you SHOULD eat. Again, I think it's more important that he get a start than to worry about it being the nutrionally perfectly balanced meal. Face it, this country doesn't eat right and we won't change that overnight. BTW, does he take vitamins? That might be a good idea. I've been cooking for one person for over 30 years. (OK occasionally 2 and for a little while more but that wasn't long). Groceries aren't sold for one person cooking but it's getting better. You can buy potatoes, onions and some things individually now but a head of cabbage, head of lettuce, stalk of celery, etc, and of course the 20# turkeys, 5# roasts, meat sold in bulk packs, etc, get real. But I digress. I'm just trying to say that for a first time cook it can be intimidating. Nuff of that. I'm hoping this is some help. I'll go through some of my menu idea lists and post back some of the things I have on there for ideas. Good luck!

Interesting thread... So hard to answer though. I enjoy so many foods it's hard to pick just one but I'll say to eat something like lasagna or chicken parmigiana- can't pass up anything with melted mozzarella and red sauce. To make is anything new that teaches me a new skill. Like the first time I made gnocchi or pasta from scratch. I love making new things and after I've done it a few times I generally don't enjoy making it again, unless I really want to eat it then I dont mind. To repeat is usually simple, sautéed green beans, and salmon. I used to make it a lot but now I won't eat farm raised salmon and the wild caught can be cost prohibitive. I've even found frozen Alaskan wild caught that was made in China, I won't buy that either. I'm assuming they catch it it Alaska and package in China.
