Lots of hot weather....any recipes for no cook meals?

I don't want to do a lot of cooking the next few days...weather is going to be hot and it is soooo humid.

May crockpot cooking wouldn't be so bad...

We liked to make dinners of Hero Sandwiches when it was too hot to cook. I also like entree salads but the meat needs to be cooked for the taco salad, shrimp and June pea salad, and chicken and cantaloupe salad. Also, if you have an outside BBQ, make sishkebabs with veggies and meat that has been tenderized in a marinade.

I cook chicken breasts in the crockpot, then use them in chicken salad, sliced in sandwiches and chopped up in pasta salad. It's much too hot to use the oven!

Anybody try "eggs in a bag"? Our girl scout troop used to love this and it works so well we use it at home. Boil water in your largest pot(s). For each person you need a quart size freezer ziploc bag (must be freezer type). In each bag you put a teaspoon of butter, 2 eggs, and any omelet ingredients you have precooked and brought with you (peppers, onions, sausage, etc.). Carefully drop the bags upright into the boiling water, do not overcrowd them and be sure the tops of the bags don't hang over the rim of the pot. Every couple of minutes use tongs to squeeze the bag contents which moves the uncooked egg to the surface. Eggs are done when no more egg 'squirts' when you squeeze the bag (about 5 minutes in a large pot with 5-6 bags). To serve, you simply 'slide' the eggs out of the bag onto your plate and sprinkle with grated cheese. Tastes great, no pan to clean, and you already have your hot water for washing the plates!

SLC, sorry I didn't get get your message until tonight. Here's a couple of cajun shrimp dishes. Sounds like you're adding some great stuff to your repertoire. I really don't mind cooking as long as I don't have to deal with leftovers, so it is actually fun planning and cooking for company once in a while. Shrimp is my favorite seafood and I love creole-cajun dishes. CAJUN STYLE BROILED SHRIMP Serves 2 as an appetizer 5-6 uncooked shrimp ¼ cup butter, melted (½ stick) 1 Tbsp. Louisiana hot sauce (Franks Red Hot or Crystal are good) 2 cloves garlic, pressed ¼ tsp salt ½ tsp coarsely ground or cracked black pepper ½ tsp finely chopped fresh parsley Pinch dried rosemary Lemon wedges Prepare the oven to 400 degrees F. Shell and de-vein the shrimp. In a small baking dish, combine the melted butter with the hot sauce, garlic, salt, cracked pepper, parsley, and rosemary. Stir. Arrange the shrimp side by side in the baking dish and bake for 6 to 8 minutes. Immediately broil the shrimp for 2-4 minutes or until the shrimp are done, but not chewy. Squeeze some lemon juice over the shrimp. Serve the shrimp sizzling hot in the baking dish This is from Ruths Chris Steak House and in keeping with their New Orleans flavor of many of their dishes. CREAMY CAJUN SHRIMP LINGUINE From Cooking Light Magazine Serves 4 1 cup water 1 can (14 oz) fat-free, less sodium, chicken broth 6 oz. uncooked linguine 1 pound med. Shrimp, peeled & de-veined 1 ½ Tbsp. butter 1 large red bell pepper, ½" slices ¼ tsp. salt ¼ cup fresh flat-leaf parsley 1 8-oz pkg. pre-sliced mushrooms 2 tsp. all-purpose flour 1 tsp. Cajun seasoning 2/3 cup half-&-half Combine 1 cup water & broth in Dutch oven; bring to boil. Break pasta in half, add to pan. Boil, cover, reduce heat and simmer 8 minutes. Add shrimp to pan. Cover and simmer 3 more minutes or until shrimp are done; drain. Melt butter in large skillet over medium heat. Add mushrooms and sliced red pepper; saute 4 minutes or until moisture evaporates. Add flour, seasoning and salt to pan; saute 30 seconds. Stir in half-&-half; cook 1 minute or until thick, stirring constantly. Remove from heat. Add pasta mixture and parsley to pan. Toss. I like this with steamed broccoli, fresh French bread, and glass of red wine.

There's always TTHD. TATER TOT HOTDISH -Ground meat (I like to mix Jimmy Dean hot pork sausage with hamburger) -Onion & celery (optional) -Vegetables (Whatever you like. Green beans are sort of "traditional" but I like corn or mixed veg) -Cream soup mixed with milk (Cream of mushroom is "traditional" but I like cream of chicken, broccoli or potato.) -Tater Tots -Cheese (optional) This is so flexible. Use amounts to make the size of dish you want. Use any kind of meat. Roast beef, turkey, chicken... I like to mix them occasionally. It's best to brown the meat and I usually cook the onion and sometimes the celery with it. Depends if I want the onion and celery with a bit of a crunch. Season as you like. I use Louisiana Hot Sauce, garlic, lemon pepper and Italian seasoning usually. Put the meat, onion & celery in the bottom of a baking dish, either in layers or mixed up, top with the veggies, top that with the cream soup and on top go the tater tots. Some like to bake the tots first for extra crunch or they'll be crunchy on top and soft on the bottom. Whatever you prefer. Cheese is optional in it or on it in the last 15 min or so. Bake it until the tots are as brown as you like. The good part is everything is cooked so you don't have that as a problem. Substitute mashed potatoes for tots and you'll have a Shepherd's Pie. You can even use fresh potatoes if you like. Like I said, it's so flexible you really don't need a recipe. Hot rolls, biscuits, toast, etc., all go well with this. Even garlic bread. Another easy option is Scalloped potatoes & ham (or other meat, or go meatless). When I make a macaroni hotdish I don't use a real recipe either. Again, you can add any kind(s) of meat or go without. Similar to baked ziti. Macaroni Hotdish -Meat of your choice -Macaroni or other pasta of your choice. I like the jumbo elbows -Sauce. Can be spaghetti sauce, pizza sauce, with or without some diced or stewed tomatoes, or you can use cream soup(s) or you can use a can of gravy, again, it's flexible. -I like to add some kidney beans and sometimes mixed veg or corn Amounts depend on servings desired and the ratio of meat to pasta you like. A starting point would be 1#-2# of meat, 1-2 cups of macaroni, small to large jar/can of sauce and add the amount of other things you like. I also like to add some pepperoni for a bit of spice. Again, season as you like. Garlic bread goes great with it. Veggies can be served on the side or mixed into these. A crisp green salad is a good accompaniment to thse too.

This thread, which I didn't catch the first time around, made me think. In general, I cook to eat and feed my family. However, I do enjoy baking for special occasions. I think that if I didn't work outside the home I would cook more...and be more adventurous. But, I work and have a long commute so by the time I get home I have to make fast meals with little time for creativity or major prep work. So, we eat a lot of frozen veggies--as is out of the bag, pre-cooked meats warmed up, pasta, soup, occasionally waffles/pancakes/eggs, potatoes, etc. I.e., for the most part things that I can cook fast. One up side to this is that our meals haven't changed that much w/o a kitchen since we do have a MW, Toaster Oven, and hot plate to cook with! One very big downside to this, though, is that my children are not learning to cook like I did from my mom. Back on topic... After finding this site and reading about zones, I realized that one thing that I really wanted was a baking center. So when my kitchen was being designed I had it in the back of my head that whatever we ended up with had to have an area I could designate my "Baking Zone", preferably near the ovens--with room to roll out dough, spread out cookie sheets, and have cookie cutters spread out all at the same time! The other thing I got from this site was our window...having the window down to the counter (OK, not cooking-related, but a very important design element!) Our very first plan that our KD came up with had input from us...but a very naive/ignorant us! (Before GW...BGW!) Then....I found this site.....and the changes began. Actually, I posted that original plan and asked for help (and also asked my KD to start over w/no island) Many, many people here helped me come up with a plan over several weeks (months?). We finally came up with a plan that has changed little since then. Interestingly, when I took away the island "must have", my KD came up with a plan very similar to what we came up with here. The only 3 differences were (1) no mini peninsula, (2) a 36" pantry cabinet rather than a corner pantry, and (3) no separate Message Center cabinets. My KD wasn't completely happy w/our differences, but she, wisely I thought, told me to go home and mock up what I wanted to see how it would work (same advice I got here!) Well, the mock up was great! It proved that I did indeed want the mini peninsula (I liked it so much I left the mock up in place until demo and used it!) When I told her the results, she didn't argue, she accepted it telling me it's my kitchen, so ultimately it's up to me. So in the end, my design was/is based on what I wanted, not what the KD wanted. [If only someone else had measured my kitchen and she was given more authority, I think a lot of subsequent problems would have been avoided.] Our kitchen isn't done yet, but it's close...so I can't yet tell you how it is going to work for us...but we are so...

Make lots of Jello dishes - Use the non-cook type of jello.

If you must have a fire, take it outside. Use a grill. If you do not have a grill, minimize the burner power inside. Don't use the oven in the kitchen range.

Salads are good, for example: cesar. You can start wirh a basic salad and crank it up so that it constitutes an almost complete meal. Open a can of spam, dice it, and toss into the salad. Slices of turkey lunch meat cut into small pieces is a good addition.

OR you can have a basic salad with sandwiches. Tomato slices are good to add to the sandwiches.

Curry chicken salad with apples served in either half a hollowed out cucumber or in a tomato.

My mother always made tuna macaroni salad when it was really hot out. That, with fresh tomatoes and corn on the cob were staple summer dinners in our home, which didn't have central air.

A deli roasted chicken from the grocery can become LOTS of good things. I think kframe19's tuna macaroni salad sounds really good!

Taco Salad Great for potlucks too!

1 head iceberg lettuce, chopped
16 oz can chili beans with sauce
1 c green goddess salad dressing(make your own or purchase)
3 roma tomatoes diced
2 c crushed corn tortilla chips or crushed tostados
4oz can diced green chilies
1 c grated cheddar cheese

Toss together. Serves 6.

We are having a chicken salad made with leftover chicken.It has mayo, red onion, celery,1 boiled egg and dill pickle relish. Salt and pepper to taste. I will serve it on lettuce leaves and tomatoes.

last night I had corn on the cob (microwaved)
tomato and cuccumber salad and sliced peaches for dessert.

I sometimes buy Tyson grilled chicken and chop to make chicken salad. ( I alway pat dry before adding mayo...there is lots of added water)

Just Love HALF a cantaloupe filled with cottage cheese and good crackers

OR chopped tomatoes, onions in cottage cheese and crackers

My all time favorite summer dinner and lunch and that I can eat everyday are Tuna Salad sandwiches (toast the bread, add a slice of tomato) along with Mexican Layered Dip & chips. The dip is actually healthy! I'm sure everyone has the recipe.

Today I made a salad of crab (imitation), thawed green peas, chopped onion, chopped celery, ring pasta, seasonings. It was very good. As far as cooking the pasta is concerned, I think I learned it here at the KT, to bring the pasta and water to a boil, and remove from heat. Cover, and in 15 minutes, it will be done without more boiling.

since it's summer 6+ months out of the yr here (orlando) we have alot of meals that are no cook. we rarely use our oven (never use crock pot unless it's winter) during the summer. it's either on the grill or not cooked lol.

greek marinated veggie salad...chilled tomatoes, sliced kalamata olives, crumbled feta, thinly sliced red onions combined w/ red wine vinegar, fresh thyme, greek oregano, flat parsley all well chilled.

we had a new recipe yesterday...from martha stewart Living magazine aug issue that is similiar...greek salad pita wrap it was very good & we subbed low-fat sour cream for fat-free greek yogurt (we ran out)! another standby is Food Networks knock off recipe for Olive Gardens italian salad and breadsticks. a few other meals we eat are pasta salads, ceasar salads w/ grilled shrimp or chicken, chilled cooked shrimp w/ cocktail sauce, fresh chilled veggies w/ cold dips... stay cool! ~ liz
