Gluten Flour

I've read where some gluten flour added to your bread-making recipe makes it rise higher and lighter. I use a bread-maker and lately my bread hasn't been as high as it could be.

I tried using the dough feature and rising, then baking it in the oven, but that didn't turn out for me either.

(My yeast is fresh).

I'm thinking of getting a bit at the bulk store. Does anyone know how to use it, the quantity? Does it have to be frozen/refrigerated?
