Pumpernickel problems
I finished making the pumpernickel, (Notice the burst at the top - that happened during rising.)

and it tastes fantastic - I couldn't ask for a better flavor, but I encountered a slight problem. I used slightly less AP flour than the recipe called for because that's all I could get in, and then I baked the bread for 10 minutes longer than recommended, but it still did not sound hollow when I removed it. It's not doughy inside,
{{gwi:1507667}}but it is a bit more moist than I think it should be, which makes slicing it a bit more difficult. The flavor is great, but I need to work on the texture. I've had pumpernickel that was heavy like this before, and it is a bit dense, although this does not diminish the flavor IMO. Here's the recipe I used:
German Pumpernickel
2 tsp instant dry yeast
1/8 cup unsweetened cocoa
1 tbsp sugar
1 tbsp flax seeds
3/4 tsp salt
1-1/2 cups rye flour
1 cup water
1/8 cup molasses
1/8 cup butter
1/8 cup vital wheat gluten flour (VWG)
1-1/8 to 1-3/8 cups sifted all-purpose flour
Butter
In large bowl, stir together yeast, cocoa, sugar, flax seeds, salt and 1 cup rye flour; set aside.
In a small saucepan over low heat, heat water, molasses and butter until warm.
Stir molasses mixture into yeast mixture until well blended. Add remaining 1/2 cup rye flour, and mix with dough hook on medium speed for two minutes.
Stir in the VWG and one cup of all-purpose flour to make a soft dough. Add additional AP flour, if the dough will accept it. Turn out dough onto lightly floured surface. Knead until smooth and elastic about 5 minutes.
Place into greased large bowl, turning over dough so that top is greased. Cover with towel and let rise in warm place until almost doubled, about 45 minutes to an hour.
Punch down dough. Cover and let rest 5 minutes.
Shape into a round loaf. Place on greased baking sheet.

Diagonally slash each loaf, crosswise, 3 times.
Bake in 375F oven for 20 minutes. Cover loosely with foil; bake 15 minutes more or until loaf sounds hollow when tapped.
Immediately remove from baking sheet. Brush top of hot loaf with Butter. Cool on a rack.
Yield: Makes 1 loaf
I didn't add in the last 1/4 cup of AP flour, making the proportion of white to rye flour off, and I think I probably should have added more water. The dough seemed to dry and did not stick together as well as I thought it should, which is why it broke open at the top. The original recipe had caraway seeds instead of flax, and it did not use VWG, which I substituted for some of the white flour.
I think perhaps I should have just baked it a bit longer, but would it have helped if I had added more water and the rest of the AP flour?
Despite the flaws, this is the best pumpernickel I've ever had - probably because it is the freshest. I've already eaten three pieces. It just screams for slices of Swiss cheese, and I only had Provolone, which worked well also. Tomorrow I'll use it for sandwiches. I'm definitely going to be making this recipe again, once I get the kinks out.
