Definitely make Glenda's Fudge Pie!!! I don't have the recipe with me at work but hopefully someone who has it will come on and post it. It is very simple and really, really good.

Hope someone has it and will share it.

If not, I can look for it when I get home, which might not be until later this evening. Does she need it for tonight? I know that alot of KT'ers probably have it, and if Glenda checks in she can post it.

Here is the fudge pie recipie I use

I use 1/4 cup of cocoa instead of 3 Tbsp.

I would bring vanilla ice cream to go with it.

With this she will be impressive!

From the Sweet Potato QueenÂs Big-Ass Cookbook (and Financial Planner)

Preheat oven to 350
Lightly grease 9X13 pan

In a large bowl mix
2 c. Sugar
¼ tsp. salt
2 c. Flour

In a sauce pan melt
½ c. butter
½ c. shortening
3 Tbsp. HersheyÂs Cocoa
Add
1 c. Coca-Cola

Pour into sugar/ flour mixture and stir well

Add
½ c. buttermilk
1 tsp. baking soda
2 eggs
1 Ârunning over tsp. vanilla

Add and stir (donÂt use a mixer for this part)
4 c. miniature marshmallows

Pour into prepared pan and bake in center of over for 45 minutes.
Be careful not to scorch the marshmallows.

You MUST ice the cake when it is hot. So have the icing ready when you take the cake out of the oven

Icing
In a sauce pan melt
1 stick butter
6 Tbsp. Coca-Cola
¼ tsp. salt
3 Tbsp. HersheyÂs Cocoa

Lower heat to very low and stir in
1 box powdered sugar

Do this quickly
Add
1 Ârunning over tsp. vanilla

Pour over hot cake.

You want to eat this when it is still hot (at least warm)
Serve with Vanilla Ice Cream

Notes:
I used HersheyÂs Special Dark Cocoa
This can be mixed by hand (spoon of course) or in a mixer until the marshmallows are added.

Fudge pie
1 stick butter
1 cup sugar
1/4 c flour
1/4 cup cocoa
2 eggs beaten
1 tsp vanilla
Melt butter
Combine rest of ingredients
stir butter and ingredients
pour into pie shell
bake 325
40 minutes

Do not test with toothpick as it is super moist

This one I made recently and it is outstanding

Simple Lava Cake

Prep: 15 minutes

Cook: 15 minutes

Yield: 4 servings

Ingredients
4 ounces semisweet baking chocolate or 3/4 cup semisweet chocolate morsels (I used Ghirardelli for both)

1/2 cup butter (1 stick)

1 teaspoon vanilla extract

1 cup confectioners sugar

2 eggs

1 egg yolk

6 tablespoons all-purpose flour

Preparation
1. Preheat oven to 425F. Lightly grease 4 (8-ounce) ramekins (custard cups or souffle dishes). Place on a baking sheet.

2. Microwave chocolate and butter in a large microwaveable bowl on High 30 seconds or until butter is melted. Whisk until chocolate is completely melted. Whisk in vanilla and confectioners sugar until well blended. Whisk in eggs and yolk. Stir in flour and pour batter evenly into prepared custard cups.

2. Bake 13 minutes or until sides are firm but centers are soft. Let stand 10 minutes. Carefully loosen edges with a knife. Invert cakes onto serving plates and sift powdered sugar over the top. Serve immediately.

***It filled 4 custard cups exactly. I DID NOT remove from the cups. Served in the cup.

Bakes in exactly 13 minutes.

It's been a long time since I made the fudge pie, but my thinking is THIRTY FIVE minutes, no more for the baking.

Glenda, do you use real butter in the pie, or could one substitute margarine?

Well, my daughter made the "fudge pie" today and has taken it to her new boyfriends for their dessert.

It was really easy to make and she also bought some vanilla icecream to go along with it.

Will let you know what the boyfriend thought of it.
