What's for dinner Wednesday?

We've been gone most of the day so tonight it's meatloaf sandwiches and sliced tomatoes with Country Sunshine's tartar sauce. I'm telling you, that sauce is good on everything! Sliced Georgia peaches for dessert.

I had a big buffet lunch, so dinner was a black bean salad w/ tortilla chips, and some hard-boiled eggs on the side. :) I didn't photograph the salad but should have! so pretty... made with what I had, so red & green bell peppers, jalapeno, mixed tropical fruit, and green onions, dressed w/ lime juice. The eggs were made this morning -- the Polish way. A basic color test run :)

Warmer here today - around 86. Because of all the rain over the last couple of days, it was very humid. I was so glad to see the sun! Our summer has been cooler than normal. I don't remember a 100 degree day so far. It was cooler than normal last year too. We went out for Mexican tonight. Had a delicious carne asada.

Sue, BLT's are so good! I'll have to buy some bacon and do that. Shirley, I didn't know that Ponderosas were still around. I'm glad that your dinner companion made up for the so-so food. OF, frozen pizza and Kool-Aid. Interesting combo Jim, bbq wings are good without the sauce! Even better with home-grown and CSA grown veggies. Raven, gotta love leftovers. We have leftovers regularly, as I don't know how to cook enough for just 2 people. Rhizo, I usually make pancakes from scratch with flour, egg and sour cream. Could I just use buttermilk in place of the sour cream?

I'm gearing up for soups, stews, and chowders FINALLY! I just cannot get in the mood until the chill settles in for good. I've got a nice, meaty ham bone in the freezer that waves at me whenever I open the door. Pea soup in the near future, yum. The recipes I've seen for Tuscan bean soup sound 'mahvelous'; I'll have to add that to my list.

Grilled Pork Chops and Cornbread Salad. I made the Cornbread Salad yesterday evening (it's suppose to chill overnight)..so my part is done! I'm not allowed to use the grill..that's Andy's job!

Picked 2 4-quart baskets of strawberries this morning.

Dinner was hamburger patties done on the electric grill.....they were so good! Rice and a huge salad of baby spinach with sliced strawberries and toasted almonds. Salad dressing was equal parts of brown sugar, vinegar and water, with a pinch of salt. Heated till sugar and salt is dissolved.

What a treat!

Glad to, Glenda. It only makes a cup so it wouldn't be too much for you (after you tasted it, especially).

TARTAR SAUCE (Country Sunshine@TMH) The BEST!!

1 Cup mayo
2 Tablespoons of finely chopped onion.
2 Tablespoons of finely chopped fresh dill pickle (I use dill relish)
2 Tablespoons of finely chopped parsley (worth buying)
lemon juice to taste. (I prefer fresh squeezed)

Put all ingredients into a food processor and whirl on high until well blended.

Oldgardener, I'll trade you some peaches for some watermelon, okay?

Oh, Country Bumpkin, I love cornbread salad. Wish I was at your house tonight :-)

Mush, where we lived once had a mango tree that had the best fruit. Did you make it? If not, what brand is it? I don't remember ever seeing it in the stores.

Gadgets, I made something similar last week with leftover steak, but it sounds great over a baked potato. Woohoo! How was it?

Jas, we had an electric grill like a George Foreman when we lived in the apartment in Gainesville. No grilling allowed. It worked well enough to satisfy our need for grill marks ;-) I'll have to try that salad dressing. Like 1/4 c. each, maybe??

Tonight is skewered seasoned pork medallions wrapped in bacon done on the griddler, rosemary & olive oil baby red potatoes oven roasted, and salad with garden fresh grape tomatoes.

I have a watermelon in the fridge too.

Glenda, if I remember right, Carolyn used to own a restaurant where they made this by the gallon. I can see why it was so popular!

Roasted asparagus with Parmeson, nachos with cheese, a glass of wine, and an ice cream cone. Sounds horrible, but was very good

I bought a chicken enchilada with Spanish rice hot meal at the deli and brought it home to eat. I only ate half of it, but 20min. later I had cramps and...well..you know. Took two big swigs of Pepto Bismo and that eventually calmed my stomach.

I also brought home a half gallon of chocolate milk and a strawberry/ruhbarb pie. What was I thinking??? Needless to say I haven't touched either one. The combination of all three would have killed me for sure. :(

thank you Patti, it was very good. I love my griddler in the summer makes cooking things like that so quick and easy. These grape tomatoes I got at the farm are so sweet they are like eating a little bit of candy, I will be getting more of those!

Always have some of Country Sunshine's tartar sauce in the fridge now. That stuff IS yummy!!
