Jasdip - I'm coming to your house for dinner, dessert sounds yummy!! Can you post the recipe for butter tarts? I love a good butter tart and haven't found a really tasty recipe.

Nothing for dinner. DH had to have an MRI today so we went to lunch between MRI and Dr.'s visit.

Maybe some gazpacho later if I feel like it.

No cook cheesecake is the best. Top it with anything. Why argue, eat both. Fried patty is the only way to eat salmon. Martini's for Happy Hour. Hot Soup on tap (again) with a liverwurst sammich. Watermelon, ice cream, grapes, cookies and M&M's peanut afterwards. Hey, back to Walgreen's, one coupon this week is the bag of M&M for $2!!

We're having chicken tacos, a family favorite, and Spanish rice.

Jasdip - your dessert sound scrumptious! If you wouldn't mind, I'd appreciate you posting your mom's recipe too. I was just cleaning out some kitchen cupboards, and I cam across some mini tart pans I've had for years. I was thinking it is way past time to use them.

Shirley, I am going to follow your lead and make creamed peas and potatoes (haven't made it in forever) and salmon for dinner tomorrow. My husband is pretty picky about potatoes, peas, and white sauce, but he loved creamed peas and potatoes. I also have potatoes that need to be used up. Thank you for the idea!!

Here is Mom's Butter Tart recipe. I love it because it's not runny and doesn't use corn syrup.

Jasdip's Mom's Butter Tarts :D

2 eggs, beaten
1 cup brown sugar
1 tsp vanilla
2 tsp cream or half and half
1/2 cup butter, melted
raisins

Make pastry and cut with a large biscuit cutter and put into muffin cups.

Put some raisins in each unbaked shell. Spoon mixture over top.

Bake at 425 degrees 10 minutes, reduce heat to 350 until done, another 8-10 minutes.

Steaks on the grill and baked potatoes. It's 98 degrees. Can't believe I have the oven the oven on for baked potatoes. UGH!
For some reason, I have to have baked potatoes with steak.

It has been a busy day. Rode with Cheryl to take KC for his doggy check up. Amber had a chiropractor appointment an hour later so met up on a county road and got in with her and Alyssa. Our lunch was at Fazoli's. I had the two pasta special, I had spaghetti with marinara sauce and fettuccine with Alfredo sauce, bread sticks and iced tea to drink. After all of their shopping finally got home. I was home in time to attend the burial of my son's dog, Duke. He dug the grave here today with his track hoe and then he and Cheryl took him to be put to sleep. He was a good dog, German Shepard. He was 14 years old. Hard to do but it was time for him. I was not hungry after the lunch I had and I only had 3 tiny Sun Sugar tomatoes from my garden.

It was cool and rainy here today. We had pork roast, gravy,baked potato, zucchini and homemade biscuits.

We had leftover steak from company Saturday, so I made fajitas to use it up. Also heated up leftover corn on the cob.

Steak, creamed spinach and goat cheese stuffed figs for us.

Hubby is braving the horrible heat to grill some ribeyes. I have cauliflower steaming in the aroma cooker. Fresh tomatoes and sweet onion salad.

I've never had a butter cream tart. Don't think I've ever heard of one either. I wonder if Lauren would like this? I am going to try your mom's recipe this weekend, Jasdip. Sounds really good.

I'm having thawed out and reheated chicken & bean soup. Lauren ate her leftovers from Johnny Carinos. She went out with her boyfriend last night.

Kathsgrdn, it's just regular pie pastry cut with a large cookie cutter to fit in muffin tins. Mom used a real large one, because she had a dimple in all of her tarts. I used a large can that tomatoes come in to make them.

I see there's lots of hot weather going on as well. I know I wouldn't be turning on the oven to bake potatoes!

We've had another cool day, only hit 18C today, less than 68F.

The weather here is about as perfect as it can get in July in northern Alabama. We'll be able to open the windows tonight! Crazy.

We just had a big salad with strips of steak on top. Sure did taste great.

Jasdip - great idea to use an empty tin can to cut rounds of pastry instead of a cookie cutter. A very useful hint and one that I will definitely be using.

I made gazpacho using tomatoes, bell peppers, jalapeno peppers and cucumbers from our garden. Followed by a dish of diced potatoes, yellow squash, and smoked sausage slowly cooked in frying pan. Dessert is a slice of blackberry made from blackberries picked in the yard.

Pizza! Last long day of band camp. There is a cookout, and afterwards they perform their show for us tonight. Then, the first performance for an audience-who aren't parents-is in three weeks.

Stacey, I use a soup can for biscuits, too. I don't have any cookie/biscuit cutters. Punch some holes in the bottom to let the air out, and away you go.
