I'll share couple favorites of my #1 as I call him, cause he's my only!

Thanks, Jasdip. I need that! I'm not totally against canned soup because they make life so darned easy, but your recipe sounds much better. Here's a low fat version of red beans and rice, which I love! I won't use a Scotch bonnet pepper though--way too hot! I'll try a little jalapeno instead. JAMACIAN RED BEANS AND RICE (Ginas Skinny Taste) Servings: 10 Serving Size: 3/4 cup Old Points: 4 pts Points+: 5 pts Calories: 192.4 Fat: 3 g Protein: 4.9 g Carb: 35.4 g Fiber: 2.6 g Sugar: 0.7 g Sodium: 133.4 mg (without salt) 1 tsp coconut oil (or canola) 1 garlic clove, crushed 1/4 cup onion, minced 1 scallion, chopped 1 sprig fresh thyme 15.5 oz can red kidney beans, rinsed and drained 2 cups uncooked long grain rice salt and fresh ground pepper, to taste 2 1/4 cups water 13.5 oz can (1 3/4 cups) light coconut milk 1 whole scotch bonnet hot pepper (not chopped) In a medium heavy saucepan, heat oil over medium heat; add garlic, scallion, onion Add the coconut milk, water, salt and fresh pepper and place the whole scotch bonnet pepper in the pot, stir to combine and bring to a boil. Remove and discard the hot pepper and continue to cook the rice until almost all the liquid is absorbed and just skims the top. Cover; reduce heat to low; simmer for 25 minutes. Remove from heat and keep covered for 10 additional minutes to allow the steam to finish cooking the rice (do not be tempted to lift the lid before that). Makes 7-1/2 cups. Be careful handling the pepper--they are extremely hot.

Sesame Orange Beef Makes: 4 servings Start to Finish: 25 minutes Â 12 ounces boneless beef sirloin steak Â 8 ounces fresh green beans, halved crosswise Â 2 teaspoons sesame seeds Â 1/2 cup orange juice Â 2 tablespoons reduced-sodium soy sauce Â 1 tablespoon toasted sesame oil Â 1 teaspoon cornstarch Â 1/2 teaspoon finely shredded orange peel Â Non-stick cooking spray Â 1/2 cup bias-sliced green onions Â 1 tablespoon grated fresh ginger Â 2 cloves garlic, minced Â 1 teaspoon canola oil Â 2 cups hot cooked brown rice Â 2 oranges, peeled and sectioned or thinly sliced crosswise Trim fat from meat. Thinly slice meat across the grain into bite-size strips. Set aside. In a covered medium saucepan, cook green beans in a small amount of boiling water for 6 to 8 minutes or until crisp-tender; drain. Meanwhile, in a small skillet, cook sesame seeds over medium heat for 1 to 2 minutes or until toasted, stirring frequently. Set aside. For sauce: In a small bowl, combine orange juice, soy sauce, sesame oil, cornstarch, and orange peel. Set aside. Coat an unheated large non-stick skillet with non-stick cooking spray. Preheat over medium-high heat. Add green onions, ginger, and garlic to hot skillet; cook and stir for 1 minute. Add the precooked green beans; cook and stir for 2 minutes. Remove vegetables from skillet. Carefully add canola oil to the hot skillet. Add meat; cook and stir for 2 to 3 minutes or until slightly pink in center. Remove from skillet. Stir sauce; add to skillet. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Return meat and vegetables to skillet. Heat through, stirring to coat all ingredients with sauce. Serve meat mixture with hot cooked brown rice. Top with orange sections and sprinkle with toasted sesame seeds

I had been craving, for some unknown reason, eggs, ground beef and spinach. I googled the ingredients and I found the recipe!!! Thirty years ago my then hubby and I had it in San Francisco at this lovely cafe for brunch. Joes Special: Ingredients Â2 tablespoons olive or vegetable oil Â1 pound lean ground beef Â2 medium onions, finely chopped ( I used 1 large onion) Â2 garlic cloves, finely minced Â1/2 pound mushrooms, sliced Â1 teaspoon course salt Â1/4 teaspoon ground nutmeg (or pinch freshly ground - I sometimes add up to 1/2 teaspoon ground cinnamon too) Â1/4 teaspoon dry oregano Â1/4 teaspoon pepper Â1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry; or 1/2 pound fresh spinach, rinsed, stems removed, and leaves chopped (about 4 cups) (I used fresh) Â4 to 6 large eggs, lightly beaten ÂSplash of hot sauce (optional, but recommended) Directions 1.Heat oil in a wide frying pan over high heat. Crumble in beef and cook, stirring often, until browned. Drain excess fat. 2.Add onions, garlic and mushrooms; reduce heat to medium and cook, stirring occasionally, until onions are softened, about 5 minutes. 3.Stir in salt, nutmeg, pepper, oregano and spinach; cook for about 5 more minutes. Add eggs. Reduce heat to low and cook, stirring constantly, just until eggs are softly set. I tweaked this just a bit....and it really doesn't look to appetizing....but man oh man is it good!

Thanks, Glenda.....this is a small portion of my family. Having had seven kids, the numbers are increasing by leaps and bounds! Have 13 grands, and now expecting the 15th great in the fall. How the heck did this happen?????

Gosh, I really want to share, but it is SO hard to pick what photos. My two grandsons are 8 years apart. The oldest begged his mom for so long to have a brother for him. They can go at it like cats and dogs, but they really do love each other. I can see the love in this picture taken at Easter when the "baby" was just 2.

This is three years later, at the zoo.

And I just love this one with the baby at one year-old with my mom, his great grandma. I see love in those eyes, too. They have a very special relationship. Whenever she gets up out of her chair, he sits in it and they play a little game of who gets to sit there when she returns.

I only have the one great grand baby. My husbands son has 5 children so those are our grands and the oldest grandson just had little Wyatt giving us our first great grand baby.

Here are my nine grandkids taken a couple of weeks ago - the little guy in the front with the red shirt is the one I am raising - he just finished swimming lessons and couldn't even put his face in the water five weeks ago - now he swims and he is so proud of himself! - so is grandma!
