Off from work today and tomorrow so tonight I'll grill

chicken breast

red potatoes

green beans or salad

rolls

The single women in our development go out once a month (tonight). I'll be having a filet/salad/potato/glass of wine (or 2).

To add to the previous message...I did the 98% water change over a 3 day period with no fish loss and mixing the tap water with the old water until almost a 85% flush of the water...I've did this numerous times in the past with smaller ponds with great results...this is the second time doing that this summer...but the first with adding beneficial bacteria after the fact....I would never risk those fish if I thought I would harm them....I have lava rock...cut up garden hose..quilt batting...and comforters for filtration in the 55 gallon drum behind the waterfall..thinking about adding uv light and a skimmer next...I have a 640 gph pump and a 3200 gph pump running into the filter...close to 1" line....hoping the beneficial bacteria kicks in soon...and will continue to add more plants.....thanks once again for the kind comments...Dave

Clare, I have my ribs in the slow cooker, too. They sure are smelling good!! Wish I could bake something for dessert, but it's 83 degrees outside and I'd have to turn on the air. Decided to bake the sweet potato in the microwave. Everybody's dinner sounds good--especially tacos!

I've only done chickens on mine, but the video at the link may be of help. At about the 6 minute mark in the video, he cooks what appears to be a eye of round. What cut of beef are you cooking? If it's a pretty juicy one, you probably don't need to worry about it too much. If it's a leaner cut, maybe you need to slather the outside with something before putting it in. The rotisserie has the advantage of maintaining the juiciness of meats; instead of dripping off the meat, gravity helps the juices redistribute to the middle. If you have an instant read thermometer, I wouldn't worry a bit. Even though I've never done a beef roast on the rotisserie, here's how I'd attack it: put the hunk of meat on the spit, rotisserize it until the center reads about 118-120, let it rest, then serve. If you don't have an instant read thermometer, go get one today. (Digital is faster than dial-type thermometers.) Then you don't have to worry a bit about how done the meat is, or how long to cook it; you just cook it till it's done. I have a Thermapen (around $90), and I consider it to be worth every penny, but there are lots of good ones out there in the $15-30 range. Here is a link that might be useful: capital rotisserie

What goes better with lamb, than rosemary roasted potatoes? Rosemary Roasted Potatoes -2 lbs potatoes (either regular size cut into chunks - peeled or not depending on your preference - or small new potatoes cut in half) -1-2 tbsp olive oil -1 tsp kosher salt (or to taste) -a few grinds of black pepper -1 tbsp fresh rosemary, minced very fine (if you want a more subtle rosemary flavour, put in whole branches to flavour the dish. If you have to use dried, use much less and realize it may not go soft in the dish) -1 tsp good paprika -about 1/2 cup meat or veggie stock, or wine -if you like garlic, add about 1/2 tsp garlic powder. Fresh garlic will burn while roasting. Remember to scrub the potatoes well if you are leaving the peels on or using baby potatoes. Heat the oven to 450 degrees. Combine all ingredients except the stock/wine in a bowl large enough to toss everything well. If you are fussy use a spoon, if you like to get INTO your cooking use your hands ;). Spread this mixture in a roasting pan or sheet with sides in a single layer. Drizzle on the stock or wine. Cover with foil. Place in oven and let steam for about 15 minutes. Remove the foil, and give the potates a stir. Place back in the oven and roast until the potatoes are tender and have gotten crispy in places. This can be anywhere from an additional 20-30 minutes, longer if the potates are really hard. I have found the longer this cooks the better it is! You could also wrap the mixture in a foil pouch (reduce the stock or wine to a tbsp or so) and cook on the top rack of the grill, but I would cut the potatoes a bit smaller and it will take at least 40 minutes. Poke a few steam vents in the top and don't flip the packet!

I just talked to Jammer and he may not be home tonight. If he does come in I will be making spaghetti and garlic bread. If he doesn't come in I will find something, maybe take out? I probably won't decide till it's time to eat.

In the spirit of the All-Star game, my family has requested hot dogs. I also got Nathan's fries (frozen) since we usually only get these when we attend a game. Now if I can only manage to have soft-serve Carvel in the house it would be just like being there!

I just returned (after 2 hours!) from the Dr. office where I have been sitting with our elderly friend...they decided that she needed to go to Ames to the hospital..by ambulance..to have a pace maker put in. I know she will soon feel much better!
