I recently acquired anelectric roaster oven. What do yo make in your? Do you use it often or just for large gatherings.

You people have been so helpful in the past and what better place to go than the KT to get sone tried and true advice.such knowledgable people. Thanks in advance.

scottymam, I had a nice brown crust on mine. I even used frozen dough and made it in there. Worked great. BTW, the roaster itself doesn't create moisture, it just holds it better. Surprisingly it's better sealed than an oven, even with the vent holes. When you cook a turkey or ham for instance you'll get a lot of moisture coming out of the meat that won't be coming out of baked goods.

There's a big misconception out there about high moisture and baking. Higher moisture is very good for baking. Bakeries often use proofing boxes for their breads before baking in the oven. When I was with the c-store with fast food we proofed the cinnamon rolls to help them rise and be lighter. Made nice big rolls. There's even some who argue that gas ovens, with the moist heat are better for baking. I don't subscribe to that theory but some do. All in what you're used to and of course the recipes and ingredients can vary. I've been told that cheesecakes come out better, I guess they don't crack as much in a roaster than an oven and lemon meringue (sp?) pies aren't supposed to tear as much. I can't stand cheesecake and don't make meringues so I can't speak from experience but this came from Virginia Olson of Nesco and she has a lot of credibility with me. She really convinced me to get my first one. Oh, some even suggest adding water when baking things so don't be nervous about moisture. It's not raining in there! ;)

Give it a try, I think you'll be very satisfied. Remember an electric roaster is actually an electric oven. Once caveat though. Nesco and most use the heating element in the sides. There are a few however that have the heating element in the bottom and I've heard some even have a combination. If you have a bottom element, you could have trouble with bottom burning. It's easy to tell. Turn it on and put your hand down on the bottom and sides and feel which heats up.

Also I would not use the Roast Air (convection) fan on things like bread.

C'mon now, be brave! Give it a try! Let me know how it turns out. What's the worst that happens? Lose a loaf of bread? And that's doubtful to me.

I do my Holiday Turkey in the Roaster and it is awesome.

I also do Ribs and Briskets in the Roaster.

Of course Pork Tenderlion and Beef Roasts.

Anything you make in an oven or slow cooker you could make in an electric roaster.
I've had roast turkey,Sloppy Joes,thought about trying it for Prime Rib, but didn't. You can bake potatoes in them too.

I always use a thermometer probe with the alarm and set it for 150ÃÂ°. Once it hits 150ÃÂ° I turn the temp way down and start getting ready because residual heat will continue to cook. I call a turkey breast done at 160ÃÂ°. The unit keeps so much moisture it's a moist heat, rather than a dry heat, which they claim will prevent cheesecake cracking but I don't eat cheesecake so I don't know about that. To brown the skin more you have to keep the skin dry. Dry it well when you put it in there, pull out juices as you're cooking, pat it with a towel or paper towels a you go, and Kitchen Bouquet, soy sauce or the like are tricks to brown it but I don't eat the skin anymore so I don't really care. I do occasionally put the RoastAir fan on and THAT will crisp it up! I used to cook the turkey breast to 180ÃÂ° per some recommendations and it was fine in my Nesco. Not dried out like in an oven. But there's no need to cook it that much but it doesn't matter if it goes a little over. Use a thermometer and turn it down to 150ÃÂ° and it'll stay hot and moist. Don't limit your use to just turkey or ham. Soups, stews, meatloaf, pot roast, chicken, ribs, casseroles, sausage, and virtually anything you'd put in a regular oven, since that's what it is! :) Great for baking potatoes, au-gratin, roasting cauliflower, steaming veggies and the like too. I've baked bread in mine and some of the best lasagna I've ever made came out of that Nesco.

Can't help you with the NuWave, but a Rib Eye Roast is a succulent piece of beef, and you don't want to cook it in an electric roaster or an oven bag. The perfect cut to roast rare to medium rare. You don't want to ruin it by over roasting it. Do you not have a regular oven? There are a number of ways to cook a Prime rib or Rib Eye roast, my favourite is the high heat method. Perfect roast every time. And as a side you can't go wrong with Yorkshire Pudding, mashed or roasted potatoes. Home Cookin 4.9 Chapter: Recipes From Thibeault's Table High Heat cooking Instructions ============================== General Instructions (for Barbara Kafka's "Roasting A Simple Art") "Different meats and different cuts have different cooking times. That's why there are recipes. I did try to find a universal rule so that I could say as I do for fish, "ten minutes per inch" or for chicken "ten minutes per pound," and then describe the exceptions. It didn't work. Timing is as much a factor of fat content, bone content, and the shape of the roast as a specific kind of meat. The only easy rules are for boneless loin of pork or beef (the shell or strip) and venison and beef fillet. They always cook in the same amount of time since the only way they increase in size is according to their length, which will not influence the cooking time." This is her recipe for a Simple Rib Roast 4 1/2 pound without short ribs Standing rib roast (2 Ribs) or 26 Pound standing rib roast (7 ribs total) 2 to 6 cloves garlic, peeled and slivered Kosher salt to taste Freshly ground black pepper 1/2 to 2 1/2 cups red wine for deglazing 1 recipe for Yorkshire pudding. Pour liquid into a small saucepan and reserve. For Whole New York Strip Loin, the directions are a little bit different. According to Barbara Kafka's instructions, it doesn't matter what size the New York strip roast is the directions are the same. Roasted New York Strip Loin one 10 pound New York Strip (16 inches) Trussed 1 head of garlic cloves lightly smashed and peeled, optional 3 to 4 springs fresh thyme kosher salt pepper 1 1/2 cup basic beef stock or a combination of beef stock, veal stock or red wine 2 tablespoons basic veal glaze optional. Place oven rack on second level from the top of the oven, or second from the bottom if the fat cover is thick. Heat oven to 500Â°F. Place strip of beef in an 18 x 12 x 2 inch roasting pan. If using, slip whole cloves of garlic between underside of meat and string. Tuck in the thyme. Slip some more garlic under the string along the top of the meat. Sprinkle the meat on all sides liberally with salt and pepper. Put into oven one hour before it will be served. Roast for 40 to 45 minutes. Remove and transfer meat to a platter. Cut off strings. Roasted Whole beef Fillet According to Barbara........"I buy the meat by the inch. It cooks exactly the same way no matter the length as long as it s more than 4 inches long. When ordering, I usually allow about an inch and a quarter per person and an extra half inch for the two end slices. By this rule, six people will require an eight inch piece of fillet. The muscles in a fillet all run lengthwise so that when it is sliced a crossed the serving it is also tenderized. The fillet is also called the tenderloin, and it is tender. It is a long round muscle that hides behind the bones on which the shell steak and the rib roast reside. T-bone steaks have some of the shell and, on the other side of the bone, a circle of the fillet, or tenderloin. Of Course... the "COOKing" forum...THAT's what I was looking for! I never, ever looked below the first batch of HOME forum topics to see that particular forum. I KNEW there had to be a forum closer to what I was asking for. Thanks pfmastin for pointing me in the right direction. I have my mother-in-law's Nesco from WAY back when, can't even read the dial anymore, but, I love it. Really heavy, sturdy, and well built, and yep pllog, it's enamel I think I meant! My daughter is wanting a roaster oven for Christmas and it seems everything's so flimsy these days, whether it's dents in the sides or hot on the edges. Just cheaper than the olden days. I may post on the Cooking Forum now, but THANKS for the input thus far : )

I did purchase it. As far as performance, I love all the ovens different modes and settings. The true convection is the setting I use the most and it bakes things beautifully. I bake a lot, for a family 8, so it’s used nearly every day. But honestly, I would probably not buy it again, solely because of the oven size. I cannot fit a 17.75” x 13” pan in it. Before owning this oven, that size sheet pan was my most used. But thankfully, because it bakes so beautifully in the convection mode, I can put pans on several racks. I have just had to buy some different size pans and learn how to work around it. Also, I do have a full-size oven in my guest house right outside my door, so thats been a lifesaver for when I absolutely have to have a large oven. The small oven cannot accommodate even a 9 x 13. I can put one bread pan in it, or some pie pans, or an 8 x 8 or 10 x 7. If you’re looking for an oven that can accommodate a 20 pound turkey, you will probably be disappointed. You might be able to find a roaster pan that could hold a 20 pound turkey that you could fit in the oven. But it would take up every last square inch in the oven. I cook large meals at holidays, and I always put the turkey in my electric roaster oven. As far as the cooktop, I love having the six burners. But the burners have been a little bit finicky, even though we’ve had a technician out a time or two to mess with the burners. Some of them don’t light immediately, and some of them go out when turned down too low. The flames don’t shoot up as straight as other less expensive gas stoves that I’ve had in the past. But overall, I’m satisfied. It’s an absolutely beautiful piece of art, and the centerpiece of the kitchen. But like I said before, if I could do it over again I wouldn’t buy it simply because of the oven size. I bought it online, so I couldn’t take my pans and go to the show room and see if they fit in the oven.

Are you talking about the roaster that looks like a king size slow cooker? If so,anything you can cook in an oven you can cook in one.I have even baked cakes in mine.

I roast 2 whole chickens at a time --some for dinner, the rest of the meat for the freezer for quick meals. I also like to roast a 1/2 pork loin (ditto meal/freezer.) I find it much more energy efficient than firing up the BIG oven and meat cooks faster.

I have the 6 qt Nesco roaster and it is a winner. Actually, I have a couple of them. In the summer, plug them in on the patio or in the garage and your house is cool and sweet smelling while your food cooks. I have made soups/stews, meats and vegetables. Have not baked cakes in them but one day I will. My son who has been moving into a new house said they have been using the Nesco to cook almost all their food in while they were getting ready to move and moving into the new place. Thanked me again for sending it to them a couple of years ago.

Nesco has booklet that will help you and the ladies at the company are super nice and helpful.

I dont' remember if I've "cooked" anything in mine. If so, it was probably ham-n-beans. But I use it frequently for warming things or keeping them warm (smoked chicken, brisket, etc.) when we have large crowds.

Grams you didn't tell us which size you have. In my 18qt. Nesco I have roasted chicken (2 at a time), beef and BAKED cakes and beer bread. In the 4qt and 6qt I have done chickens, roast and stews. Just love them.

My 18qt roasters have buffet inserts and are great for keeping food hot for parties.

I use one to heat towels for a body wrap, and stones for hot stone massage! (haven't had many requests for these however, don't get it, its only going to 105 here today, before the heat index kicks in!)

Now, if you want to know food, beef stew, beans, chicken, anything I need a large amount of, or if there is a crowd coming and I need more stove/oven space.

I have a 4 qt and a 6 qt Nesco and they're great. Just made some baby back ribs the other day, I've used it for anything and everything from heating water to add humidity to the air to baking bread, turkey breast, chili, soup, stew, roasts, meatloaf, meatballs, burgers, brats, hot dogs, pizza.... let's see, what else? The best lasagna I ever made was in the roaster. Anything you can do in a slow cooker or conventional oven can be done in the electric roaster and often it will be better. One thing though, it's such a moist heat that if you like the crusty brown you'll have a challenge - it's just so moist. I usually wind up using a baster to pull the extra moisture out when I make a turkey breast and before I got the Roast Air lid I would just cock the lid to let the excess moisture escape and turn the heat up higher. It would brown it better that way. But I've gotten away from eating the skin so that's not a big deal, plus the fan lid solves that problem.

cynic, when you bake the bread in your roaster does it come out well browned, or does the extra moisture make it difficult? I'm wanting to bake off some bread but at 100 + degrees it is not to appealing to run the oven, the roaster however produces so much less external heat it could work.

My grandmother made pot roast in hers. She also baked turkeys and kept tamales warm in it. I'm sure she used it for more, but that's all I recall.

I had purchased mine to stretch my oven options at Thanksgiving one year and have used it very little. Sue, thanks for the idea of using it outside during the summer! I never would have thought of that and we don't/can't use our oven when it's hot........

Seriously, I'm sold on the value of roasters. I think they're far better than a slow cooker. I grew up with my Mother using a roaster for the Thanksgiving turkey virtually every year. That one was not a Nesco but worked the same, and oh what memories! Thought it died once but it was the timer that she used with it. Seldom did she use it other than a couple holidays. I had sort of "interited" it after my mother died and I wanted to use it for a few things but then my sister wanted to borrow it and I never got it back! But I don't have much need for a larger roaster. The small ones work perfectly for my use. I'm going to make some ribs in it this week. Want some? :)

Incidently, there's another use you might not have considered. Take the cookwell out and fill it with ice for your patio picnics and put your cold salads in there. You can put the cover on it and have a mini refrigerator! Would work fine for beverages too, but with the fear of potato salad in the summer, there's another use that could keep you from getting sick.

Thank all you good people for the responses. Forgot to mention that mine is a 16 lb roaster oven, Haven't tried it yet but some ofyour suggestions are appealing.
Carol -how did you make applesauce in it? The strained or sliced apple sauce? my apples wil soon be ready. Thank all you good people.

Has anyone prepare a frozen entree in a roaster? I need to have Lasagna for a work party and would like to use frozen Stouffer's Lasagna. Any one experiment with this yet?!!!!

Again, it's an oven. Will work fine. I've done frozen convenience foods in mine. One caution, the edges closest to the cookwell may cook a little faster if you prep it from frozen state, especially if you're using a small oven and a large pan. I'd probably thaw it before cooking too. Especially if you don't have the fan. I like the Stouffer's lasagna occasionally but have found that it cooks unevenly even in a regular oven if you put it in frozen. Actually, if you have the two-tier rack, you could cook two of them if you need to or put in some garlic bread if you wanted to. Or set the bread on top of the pan too.

It might be a good idea to test one first to make sure you are comfortable using it. It IS different than a conventional oven, but not much different. Like using someone else's oven.

FWIW, the best lasagna I've ever made was in my 4 qt Nesco. First time I tried making it where I didn't cook the noodles and it was terrific.

I've done cabbage rolls in mine, whole pork loins to shred for sandwiches, and augratin potatos. It was my MIL's and is very old, tho maybe not as old as I am! Truly, I don't know how old! She used to make pork and saurkraut in it, and who knows what else. My grandmother always did the Thanksgiving turkey and the Easter ham in one.

i didn't know they made smaller ones now. That might be an idea for me for the motor home for group trips. Next weekend, just with family, there will be at least 14 of us! I only have the microwave/oven/grill combo in the motor home, not seperate units, so I can only do small pans.

Hi Tami, Moni's site is great, Target also carries Nesco Roasters on line.

I do recomend the non stick, I've had my 6qt before they made them with the non stick, I do have to soak and scrub the insert pan, think your grandmothers enameled roasting pan. Nescos have the heating element around the outer edge, not the bottom.

Have been making lots of sloppy joes this summer, 2-3 lbs of ground beef, chopped onion, can of tomatoe soup, can of stewed tomatoes, pepper and dried red pepper to taste. Cook the beef in roaster, turn temp down to slow cook and add what ever you like to make sloppy joes, mix then let roaster do the cooking, doesn't take long and you can keep it on low to serve. The 6 qt will hold LOTS more beef etc. than I use when just cooking for myself, hey this mixture does freeze, if you have any left. The six qt. will do a nice size chicken do to its oval shape.

Ivamae, I just checked the shopping channel that starts with Q and their prices for Nescos are okay, and they are selling the non stick ones.

I did check the Nesco site and to get a non-stick insert pan with shipping would cost too much for a roaster I only use at my summer home, have non stick 4qts. and 18 qts. at my year round home, so I will keep on scrubing. Note to self, bring one of the 4 qts. to Avalon.

Personally I dislike the non stick feature. I have only one frying pan, for here at home, plus two pots in my camping gear, left with non stick.

That crap comes off at some point, and then there you are, eating non stick stuff.

YUCK.

I prefer to scrub, then to eat that.

Can you use a non-stick spray on the regular insert? Seems like that would eliminate a lot of scrubbing.

Yes Wantoretire you can use a non-stick spray in the roaster, now why didn't I remember that.

Moni, I'm not a big fan of non-stick pans either, cook a lot with old cast iron, (Griswald & old Wagner, highly collectable. Do to the fact you don't need to stir often with the roasters I'm hoping to use them for a long time, I do have the enamaled inserts that came with 4 qts. so as long as the elements work I'll have them to pass on to my "kids".

Do to this information coming back again reminds me to take one 4qt. to New Jersey when I go back.

There are plastic liners to use in your roasters and slow cookers that are great. When we have a lot of roasters going at church, the liners have been a god-send.....of course, they would there!

I used to have a 4qt., a 6qt. and an 18 qt. Nesco roaster. I gave the 6 qt. to my dd and kept the other two. I use the large one mostly at holidays to roast a large turkey, then use the buffet pan inserts to keep some of the food warm.

I use the 4 qt. a lot. This past week I've cooked roast/ potatoes and baked pork chops. Last week I cooked a pork loin roast. I've cooked meat loaf in it and a lot of other things that I cannot recall right now. In the summer time I bake potatoes ( baking pot. and sweet potatoes ) in it on the back porch to keep the heat out of the kitchen.

I always spray mine with non stick spray. I didn't know there were plastic liners available for them. I will look for them. That will make clean up easier than ever.

How I made the applesauce....
I quartered and cored a bunch of apples and put them in the roaster at about 180 degrees.....added a little water and lemon juice, put on the lid and let it cook, I checked it periodically, stirred it until the apples were soft. I let them cool down and put them thru my Mom's 1926 pointed food colander and mashed the apples through with the old wooden cone that came with the colander. I like unsweeted applesauce but I am sure you could sweeten it near the end and add cinnamon to taste.
Or you could peel and core the apples before placing them in the roaster..
I also use my roaster for steaming corn and other vegetables.

I just ordered a 6 qt. from Nesco. I cook with propane and it is SO expensive, I thought I might save some $$ and get more moist meat to boot. Can't wait to roast a chicken!!

I don't like using the spray coatings. They build up on there and are so tough to clean. So much of my bakeware has that crust on it and it really irritates me. Makes me wonder what it does to a person's insides when it does that to cookware.

Properly treated enamel becomes rather "non stick". But I don't treat mine right. So I line my roasters with heavy duty foil. Then I can sometimes just pull the foil and put it in the frig for storage of leftovers. I tear off a sheet large enough, turn the cookwell upside down, place the foil over it and form it around the cookwell on the outside and guess what? Fits inside nicely when you flip it over and insert inside.

FWIW, I used my Nesco yesterday to make sour cream/chive potatoes and chicken cordon bleu. Will probably make ribs this weekend, or a tater tot hotdish. It's getting to be falltime here in Minnesota and that's Nescotime. Soup, stew, chili, pot roast, turkey breast... Them's good eats! And easy prep.

Cynic - I read somewhere that if you apply the non-stick spray coating when the pot is hot, it will get a build-up. DH used to do this on a griddle and we had to throw it away eventually. The spray coating was actually chipping off! I've never had a problem as I apply it before turning on the heat.

What great ideas for using my electric roaster-which I haven't even used yet!!! Yes the liners are great. The only place I have been able to find them is at a resturant supply store and you have to buy a case. Our church buys a case and then sells them to whoever-$1.10 each for the 18# roasters.Works good for me. Again I want to thank all you good people for your help.

I received my Nesco 6 qt. and have used it twice. The first was for beef stew from the Nesco recipe, which was fabulous. It was so easy, I kept thinking that I'd left something out, but it was great!!!

Then, I made a cut up chicken - tender and juicy. Next will be the Purdue oven-stuffer chicken.

I'm a confirmed believer!!

I have baked 2 pies at a time, used it for large recipes like stew for a crowd, chicken pieces and many more things to roast. It is the best thing since sliced bread, it bakes THAT good too.

I'm new to using an elec roaster... when cooking a lasagna, I layer ingredients in a Pyrex 9x13 baking dish.. do I just take that entire dish and put it in the roaster like I would an oven?

Yes. Put it on the rack in the bottom of the roaster. I have baked cake and biscuits in mine. I bought it used...$20...and it looked like new...but is so old, it has a cloth cord. Probably nearly as old as I am. My husband keeps trying to get me to buy a new one but this one works fine and looks great too.

I have several sizes of nesco roasters the smaller one is hard to clean. I guess we use the 6 quart the most as it is nonstick. We use it for barbecue mostly. The 18 quart not that much and when we use them it is usually outside on a bar. I have loaned them out to a lot of people. I do wish they would keep them as we are older now and really don't use them a lot anymore.

I have two and use the small one at least once a week. It has the lift out cookwell and baking rack. Nesco 4 pound roaster oven. I just bought this one and we smoked a turkey in it. It also has the lift out cookwell. Oster Roaster oven

Having a place to store mine would have been a problem, but I went to an auction and on the spur of the moment....or, caught up in the moment....I bought a cupboard. It has glass doors on top, and I didn't even open the doors at the bottom, but it was built, obviously, to hold a roaster oven. The bottom shelves were cut out and my Nesco perfectly fits in there. I didn't realize it until I got it home.
