Have to tell U about one couple at dinner party!

These people, that I'm traveling with are well versed in world travel. Wow! And I thought I had traveled. NOT like them.

One of the couples at my table: They shared their 40th anniversary at Victoria Falls, Africa, with friends and family for an anniversary picnic, two years ago. Wife is the travel agent sponsoring this trip, and of course, she knows all the perks.

She's American and he's German, and what a story teller George is!

Me being the only single person,from here (there are 3 single women total). I did NOT feel out of place one bit. Welcomed with open arms. Even renewed friendship with my ex-s frat college brother.

There will be a total of 25 once we get to Glascow.

One gal is going transatlantic, crossing over on the Queen Mary whatever number. She'll go to London then meet us in Scotland.

Am getting sooooo excited. Please be excited for me.

And there's an Antarctica trip in the making and my name is on the to go list. Yippee doodle!

Glenda I am excited for you!! I am sure you will have a great time! I hope you get to go on that trip to Antarctica - I would love to go there~

My niece's husband proposed to her at Victoria Falls - it was quite romantic.

Golly Glenda, you bet I am happy for you. That is so exciting and it sounds like you have some very interesting travel partners too. I am also hoping that you get to go to Antarctica. I think that would be thrilling.

Or Chinese New Year, which is February, 28. It's the Year of the Tiger. Each guest can dress like their zodiac animal, and personality profiles and horoscopes can be given for each guest. Party favors can include fortune cookies presented in "take-out" style containers. Stacy, this chicken dish is really good and is only about 30 minutes from start to serve. You could serve it over rice or orzo that you prepare in advance and just warm up. Creamy Tarragon Chicken From Fresh Market-Grand Rapids, MI 4 boneless, chicken breast halves Salt & pepper to taste 3T all purpose flour 2T olive oil 1T onion, finely chopped 1/4 c white Bordeaux wine (you could use any white wine) 1T fresh tarragon, chopped 1/4 c chicken broth 3T butter 1/4 c heavy cream Season the chicken breasts with salt & pepper, dredge in flour. Set aside chicken and remaining flour. In large sauté pan, heat olive oil over mediumh igh heat. Brown the chicken 2-3 minutes per side until golden brown. Set aside and keep warm. Add onion to pan and cook 1 minute. Pour wine into pan and increase heat to high. Deglaze pan by cooking until almost all the liquid has evaporated, stirring to loosen browned bits on bottom of pan. Reduce heat to medium low and add reserved flour, stirring to form a thick roux. Stir in tarragon and broth. Return chicken to pan and cook until chicken is cooked through and juices run clear, about 10 minutes. Remove chicken to plates, add butter and cram to pan and heat through. Spoon sauce over chicken and serve. Joe's Seafood lasagne is rich, and super elegant. You can use any combination of seafood you like, really, and it can be made ahead. WHITE WINE SEAFOOD LASAGNA Makes 6 good portions; 8 for the smaller ones 2 pounds bay scallops 1/3 cup butter 1 cup green onion \-\- chopped 1 clove garlic \-\- minced 1/4 teaspoon thyme \-\- dried 1/3 cup all\-purpose flour 1 cup chicken broth \-\- regular strength 1 cup whipping cream 1/2 cup dry white wine 8 ounces lasagna noodles 1/2 pound crab meat \-\- cooked, shredded 1/2 pound swiss cheese \-\- shredded Rinse scallops well and drain; if using regular scallops, cut into 1/2\-inch pieces. Melt 1 tablespoon of the butter in a 12\- to 14\-inch frying pan. Add onion, garlic, and thyme; stir on medium\-high heat for 1 minute. Add scallops and cook, stirring often, until they are opaque in the center (cut to test), 2 to 3 minutes. Remove from heat and pour scallops into a large strainer positioned over a bowl; let drain 20 to 30 minutes. In the same frying pan, melt remaining butter on medium heat. Add flour and stir until it turns a light golden color. Remove from heat and smoothly mix in broth, cream, and wine. Return to high heat and bring to a boil, stirring. Set aside. Fill a 4 to 5\-quart pan 3/4 full with water and bring to boiling over high heat. Add lasagna noodles and boil, uncovered, until tender to bite, about 10 minutes; drain. Rinse lasagna with cold water until cool; drain again and set aside. Pour scallop juices into a 1\- to 1\-1/2\-quart pan and boil on high heat, uncovered, until reduced to about 2 tablespoons; stir near the end to keep juices from scorching. Mix juices and crab meat with cream sauce. Line the bottom of a 9\- by 12\-inch buttered baking pan or dish with 1/3 of the lasagna noodles. Spread noodles with 1/3 of the sauce, top with 1/3 of the scallops, then with 1/3 of the cheese. Repeat layers twice more, ending with cheese on top. Cover pan with a lid or foil; if made ahead, chill up to one day, then bring to room temperature. Bake lasagna in a 350 F oven for 20 minutes. Remove foil and bake until cheese is golden, about 20 minutes longer. Let stand 15 minutes before cutting; lift out portions with a wide spatula. Makes 12 servings as a first course, 6 as an entree. Iam having a paarty in 3 days with about 20-30 people. I thought I would get on this web site and find out how to rescue myself. Seems I will have to go to desparate measures, make my list today, shop tomarrow and cook all day Friday?!I was thinking about a Ham with sweet patatoes and patatoes. For desert, I ordered a liqior pound cake, however I need plain old chocolate for the kids and non alcohol types. Cookies, pie and more veggies of some sort....(Iam in trouble...)Any suggestins how to stay stress fress while one stresses out?LOL I do this to myself ofen, so I usually can pull it all off well, I just wish I could give myself more time to prepare mentally, Cheers and good luck to you, have fun!

Yeah, I've heard the cooking of Scandanavia is pretty good. I did some investigating two years ago when I got invited to a scandanavian pot luck! I brought blue cheese spread on rye krisp, and potato-beet salad, yum! Those nectarines sound divine. My mom used to make us grilled peaches for dessert when I was a kid, sounds similar. I could even add a sprinkle of cardamom, which I love. Or make this recipe for cardamom cookies that I have and have never tried. Grilled nectarines in a little glass dish with a cardamom cookie on the side, sounds very elegant. I was toying with making the peach-raspberry pie that I love, but that seemed too rich. I love to make it though, I throw together a bag of frozen raspberries, a bag of frozen peaches, a glop of brown sugar, a dash of cinnamon, dot with butter and then use a pre-made crust. "Homeade pie" that always gets me raves at potlucks, all in about 10 min. to prepare. Those mushrooms sound awesome Lars, thanks! It will give me a chance to use up some of the basil I froze last summer.

Have fun and take lots of picture. The bus drivers just don't seem to know what to make of the Southern accent, LOL.

I'm sure excited for you Glenda!! That was nice to get together before the trip. Since you'll be spending a lot of time together, it's nice to know who that time will be with. It sounds like they will be fun! When is your trip, where are you leaving from, where are you going and how long?

Generally when there's a group traveling together, someone has a cookout/somethig, so all can know who they will be with for two weeks or so.

Scotland/Ireland, August for 15 days total.
That's what last nite's gathering was for.

Sept. fall foilage cruise from New York. Already met with this group and another meeting the 30th of June.

That's should settle my fever to travel for a while :o)

Ooh, I'd love to take that fall foilage tour. My neighbor went last year and said it was beautiful. She went all the way to Newfoundland. Is that the trip you're taking? I'd love to see Newfoundland, thanks to Casey's pictures.

Glenda, 2 of my Mother's Friends are going on a Cruise to Scotland/London and then to Anartica. I just talked to them yesterday.

If you run into a Laura and Loreen from Texas that's them. LOL! They are both in their 80's.

Oh, I *wish* I could visit Scotland again. When I was 14 and touring Edinburgh I didn't know an ancestor built what is now called the John Knox house. (He supported 'the wrong side'; was hung; his house awarded to Knox. Guess you had to know when to hold 'em and when to fold 'em even in the days of Mary, Queen of Scots!)

My goodness,Glenda - I bet you are excited. Here's to having some grand times on your trips.

Glad you are posting. A lot of people don't really know how to get started on these types of trips - especially singles. It's good to hear it can be done and it can also be fun!
