I have the same problem with my husband, can't and won't learn to cook. Times when I knew I was going to the hospital I would cook and freeze his meals. I grilled pork chops, ham slices, chicken, sausage & hamburger steaks. I cooked the veggies he likes, crowder and pink eyed purple hull peas; some lima beans and colored butter beans, & English peas. Green beans doesn't freeze well. I have plastic divided plates I used to freeze the meals in. All he had to do was take it out of the freezer in the morning and microwave it at meal time. I also did
Rotel chicken which makes enough for 15 meals. You can buy bags of prepared salad he can use. Good luck to you.

When I was pregnant I lined my casserole dishes with foil, mixed casseroles and put them in the foil-lined casserole dishes, then froze the filled casserole dishes. I then lifted the frozen casserole-filled foil out of the dishes and put them in big ziploc bags (without the dish). That way the frozen casseroles retained the shape of the casserole dish.

Whenever I needed one of the frozen casseroles, I took it out of the freezer the night before and put it back in the casserole dish, foil and all, then refrigerated it to thaw. The next night I put the casserole dish in the oven and baked it, foil and all.

Baked ziti, baked spaghetti pie, chicken divan, chicken pot pie, chicken noodle casserole, lasagna, homemade beefaroni, enchiladas are all good this way.

Another thing you can do is precook chicken or ground beef with peppers, onions, and seasoning and he can thaw that out and assemble burritos or tacos, or use for taco salad.

Breakfast sandwiches. Bake bacon on a jelly roll pan @ 425 for about 15-20 minutes. Freeze when cool. Bake 1# rolls of bulk sausage (think Jimmy Dean or Bob Evans)like meatloaf, on a wire rack in a pie plate or something with sides until a meat thermomter reads 160°. Then freeze. Easy to slice to fit bisquits. I make tubes of refrigerator bisquits, then fill with egg, cheese and our choice of meat.

Anything that you might freeze when you have leftovers, just make ahead and freeze, first lining what ever dish you make it in with foil or parchement paper. I have been doing this for the motor home, for when we have been exploring all day, and want to come home to something I cooked, but just quickly reheat.

King Ranch casserole, lasagna, spaghetti sauce, stuffed peppers....all of them freeze well.

I buy large quantities of good burger when it is on sale and then I fry it all up with onions and seasonings. Then package it either in quart freezer bags or gallon bags. When I need a quick supper, I take a bag of burger and make spaghetti, Manwich, goulash, chili, mashed potatoes and hamburger gravy....or whatever you like with burger.

I also do the same when I get a chance to get some rotisserie chickens on sale. I debone it all and put it into freezer bags. Great for making chicken chili, enchiladas, chicken salad...whatever.

One of our favorite meals is from The Pioneer Woman's web site -- it's called Chicken Spaghetti. It's great for when you have company, because it makes enough to fill a big lasagne pan; or you can mix it all up and freeze it (you could divvy it up into smaller containers) and then just take out what you need and stick it in the oven or microwave until it's ready.

When we make it, we use white cheddar cheese (instead of the orange-colored cheddar), and we also add about four cloves of garlic, finely minced. We omit the pimentos, too. We're going to add some julienned sun-dried tomato next time we make it, 'cuz we think it would be really good...

Right now there's some Chicken Spaghetti in microwaveable containers in the freezer. Hubs and I can take them to work -- between the time we get to work and the time we have lunch, the stuff has thawed but still is very cold (and safe), and then we can microwave it to the perfect temperature and then -- YUM!

When we serve it for dinner we also have a salad and some Buttered Rosemary Rolls (also a recipe from Pioneer Woman).

Some of my favorites are lasagna, meatloaf and making the hamburger/onion mix for all kinds of things, from quesadillas to sloppy joes to pizza or whatever. Another easy thing to do is cook a turkey or two, (or a ham, pork roast or even several chickens at a time, etc) pull all the meat off the bone and freeze in portioned bags. You can add it to pasta, quesadillas, pizza, hot turkey sandwiches or a full turkey dinner. Instant mashed potatoes and canned gravy, stuffing mix, frozen/canned veg and the like make a speedier preparation and a pretty luxurious meal. Oh and frozen meatballs are good for a lot of different things. By themself, as a meat ball sandwich, with spaghetti, in a casserole, etc.

Most any casserole should freeze well, especially pasta. I would think a hashbrown casserole (with meat) would freeze well as would rice & meat casseroles.

Boneless/skinless chicken breasts are a great convenience food. Use for a lot of different things.

And there's always the store deli. Prepared chicken, meatloaf and other items are available for really bad days.

Do you have an electric roaster? This would simplify things. Even a slow cooker, though I prefer the roaster for versatility. But pot roast can be put together and cook in the roaster/slow cooker. Soup, stew, chili and more. It doesn't all have to be frozen. Do a double amount and you'll have a second meal for a couple days later.

Baking some sausage & potatoes takes little prep work and can cook together. Or steam a head of cauliflower and put some sausages in there with it.

Braising ribs is easy to do. Country style ribs are easier (no membrane to remove or bones to bother). Put them in the oven, electric roaster or slow cooker or even do it on the stovetop. Braise them slowly and they're fabulous. An hour before they're done, pop some potatoes in with them and they'll cook together and 15-30 min before you can put in some corn on the cob (frozen saves you some prep work of husking). You can also flatten the country style ribs with a mallet, bread them, fry them and have a pork cutlet with more taste than a pork tenderloin.

Is your son able to help with some cooking or at least prep work? Personally I think people do a disservice to their kids by not teaching them at least some basic cooking skills. A pot roast, chili, even a turkey doesn't take a Gordon Ramsay to put on the table. You don't have to be very old to husk some corn or peel potatoes.

Perhaps it would be helpful to make out a meal plan. One easy way is to take a two week plan and just continue it. There's the old If it's Monday, it's spaghetti day for a weekly plan but it's really just as easy to do two weeks. Figure out some easy meals. Don't hesitate to make one day a week sandwich and salad day. Or a breakfast for supper day, whether it's bacon and eggs, breakfast casserole or even frozen waffles and brown & serve sausages. Frozen/canned veggies and bagged salads are great. The weekend cooking is a great idea but even when cooking, try to cook for at least two meals.

Maybe some of these aren't the healthiest or as healthy as you'd desire, but any of them are far better than burgers and fries from a drive through. And hey, that's not to say that an occasional bucket from the Colonel is all bad either.

By combining some freezer action, some simple to prepare meals, especially covering two days, some occasionl take out or delivery, hey, the time will pass quickly and you won't be feeling guilty. And you shouldn't feel guilty anyway.

I make 50 breakfast burritos & freeze them for DH. Note: No eggs, they don't freeze well.

50 flour tortillas
8 cups cooked rice(white or brown)
3 64 oz cans green enchilada sauce
3 lbs cooked breakfast sausage
2 lbs colby grated yellow cheese

Divide ingredients among tortillas. Fold up. Put in ziplock baggies, pushing air out as you zip them. To eat, set on napkin, open baggie, put on high in mircowave for 2 minutes. You can also serve them smothered with more canned enchilada sauce, lettuce, tomato, sour cream & cheese. :0)
