I made a 4 1/2 pound roast and DH and I will have some tonight and then I'm freezing the rest and a lot of gravy to give my son. He cooks but he doesn't have time for a 3 hour roast. So this will be a treat when I drop it off later this week.

quilly, I love eye of round, it's my roast of choice also. Broiled rare and juicy (dare I say bloody?) it's (for me) the best roast for a meal of summer veggies. I think that a lot of folks overcook the cut and it gets an unfair label as dry.

I cook it very rare and after letting it sit for a few minutes I slice it thin. Honestly, if you don't see red juice flow when your slicing it you overcooked it.

and TT do you put foil over you steak and let it rest?

I had pork chops on the little grill that were brushed with a mustard/balsamic vinegar and garlic mixture, fried mashed potatoes and carrots steamed in sugar, butter and a bit of water.

Bourbon Street chicken and corn muffins. I didn't have any corn to put in the muffins so I used some Trader Joe's corn salsa. They had a nice bite to them.

I'm craving Mexican but gonna do a salad with some chicken chunks...Dh will eat whatever I put in front of him as long as he doesn't have to cook it or drive to get it...I like that in a man...LOL...

Liz, you must have a few days off. Chicken salad's on my list for this week, too. Almost too hot to eat so salads are nice.

Jas, I almost bought rhubarb at the store today. I was thinking of a strawberry-rhubarb pie. Just thinkin's all I did, though.

The pork roast was just this side of icky. It was falling apart, but dry, dry, dry!

I wish I was at Quilly's house. I love all those veggies, especially rutabaga. I like it roasted.

I can't get over that the pork would be dry in the slow-cooker Patti. I did read a couple of times, that meat gets dry if over-cooked even in a slow cooker. I wonder if cooking it for 5-6 hours instead of 7-8 for instance would help.

Liz my husband is the same way, anything I put on the table he eats with very few exceptions. He will go and pick it up too ........He loves food but he's not a cook.

My hubs is the same as well. He's up for eating anything I make. He has 2 intense dislikes......eggs and mushrooms. Although he does say that I can put mushrooms in a dish, as long as they are big enough that he can pick them out. And he does like devilled eggs and egg salad, but no hot eggs.

Patti, you always have something intereseting cooking. I wish it were so easy for me. DH can't eat anything without it bothering him. I am at a loss on what to cook.
If you have any good Ground Turkey recipes (without all the sauces) I'd love to have them.

I just read online recently that since they started raising pigs to be "the OTHER white meat", they are now very, very dry. About a week ago, the FDA even lowered the acceptable temperature that pork can be cooked by about 15 degrees. I think what they NEED to do is stop raising them so lean. Fat adds flavor. I can cut off the excess. I used to love pork roasts, pork chops, etc. No more.

I've had the same problem with pork chops lately, too, redcurl. I am beginning to think it's the meat and not the cook.

Joann, are things bothering his stomach or does he have allergy-like symptoms. If it's his stomach he probably should see a doctor. I sure am glad I decided to have a turkey breast when y'all came for lunch or the poor guy would've been really hungry. :0

About any recipe you use for ground beef you can subsititue turkey for. Shepherd's pie comes to mind as a dish that isn't spicy but still tastes good. What are some of the things he can't tolerate? That will help us give you some ideas. You might also want to list things he doesn't care for. I know a lot of men don't like mushrooms for some reason.
