What's for dinner Wednesday?

DSis and her DH got back from their Belize cruise Sunday and today was the first time I've had a chance to talk to her. Land, there was a lot of catching up to do. Obviously, since we talked for over 2 hours :-)

Tonight we're having small hamburger patties on lettuce on plate with sliced avocado, tomatoes, mango, black olives, my semi-homemade pickles and deviled eggs around the edge. Strawberry pie leftover for dessert.

Glad I decided on something easy after my phone marathon!!

I picked up some beautiful thick pork chops, I am going to do those blackened and steam some fresh green beans to go with it.

Raven, I finally remembered to pick up some asparagus! I'll have it tomorrow with something. Ellendi, tonight I just cooked it in a very basic way. I like having cold leftovers to put on a salad, in my green sludgies, soups, etc. One cup quinoa, rinsed and drained twice. Use a mesh strainer. Add one and a half cups water or broth to the pot with the quinoa, bring to a boil with the lid on....then turn heat down to simmer for ten minutes or so. Let sit for five minutes with the lid on after the heat is off. I also add it raw to any rice or mixed grains that I'm cooking. I even add it when I'm making pea or lentil soup! Always rinse it....it has a bitter taste otherwise.

Pam, we generally eat around 5. Today was super easy, threw the ziti in the microwave! Laura, don't ever worry about posting meals, a number of us have breakfast for dinner and that kind of thing. Less-than exotic meals! LOL Sue, I thought your meal was so good, real comfort food. Then I read "tv dinner". Too funny. Raven, Can you ship me some of your leftovers??? Ribs and brussels sprouts. Oh yummy. Laura we like tuna casserole, I make a roux and put hot sauce in, and peas. Gotta have peas in mine. Pam we like grilled pork chops better than steak! Are your potatoes on the grill as well? Lately I've been cutting the potatoes in slices and grilling them that way.

Sue, BLT's are so good! I'll have to buy some bacon and do that. Shirley, I didn't know that Ponderosas were still around. I'm glad that your dinner companion made up for the so-so food. OF, frozen pizza and Kool-Aid. Interesting combo Jim, bbq wings are good without the sauce! Even better with home-grown and CSA grown veggies. Raven, gotta love leftovers. We have leftovers regularly, as I don't know how to cook enough for just 2 people. Rhizo, I usually make pancakes from scratch with flour, egg and sour cream. Could I just use buttermilk in place of the sour cream?

I'll join any one of the three of you. All of it sounds good. I ate a hamburger midday so only opened up a can of broccoli, chicken, potato soup for my meal. Followed that up with a Rolo McFlurry from McDonalds that I had in the freezer.

calzones from coatco...we were so tired after a long drive today (business for dh) when we stopped for gas, went in and grabbed dinner, lol...

Unplanned guests for supper but we had plenty, meatloaf, carrots, potatoes, cream style corn, peas, crescent rolls and diced peaches. We just about ate it all up!

Raven, I can just picture your dinner. And a pretty picture it is, too! Lately, I've been buying bone-in pork chops. I wasn't having much luck with the boneless ones. But if you use the boneless, can you give me some tips for keeping them tender?

Tobygirl, what a feast you had tonight. Sure sounds good to me.

Susanjf, that was good thinking after a long drive. Being in the car a long time is so tiring.

Sue, if anyone was always ready for unexpected company, it would be you. Lots of nice vegetables--yum! Better be careful, or they may spread the word :-)

I think I'll just drop in on Sue!

Well, for the fourth evening, I've had left-over pork with mushroom sauce and scalloped potatoes. AND THAT IS THE END OF THAT. It was just so handy to heat up, but I'm sick of it now!!

We had BLT's with the second tomato from our garden, along with chips and cookies and ice cream for desert. Lovin' those fresh tomatoes. Tomorrow I plan to make roasted ratatouille with homegrown Japanese eggplant, which we've never raised before. Not sure what to have with it yet.

Mel's Diner in Pigeon Forge, 4 of us had cheeseburgers, my dd had to be different and ordered a quasadilla. Those burgers were so good!
