Apple sauce meatloaf, baked potato and green beans almandine

I cooked some dried lima beans. Had a bowl of them, and a piece of meatloaf I'd made earlier this week.

It's so cold, windy, wet, miserable here in my part of Ohio. But so far the snowfall today has been only a slight covering.

Hi Ellen!
A storm blasted into the area all day today.
I made Pasta Puttanesca which is one of our favourite pasta dishes. And very quick to make as well, which is a bonus.

Monica, your salmon sounds absolutely delicious!!! Summershine, that is one of my very favourite comfort foods. We love meatloaf with either mashed or scalloped potatoes. Like you, we're frigid, here in Ontario Shirley, here is the broccoli soup that we love. Ghoghunter posted it a few years ago. My changes are in brackets. Broccoli-Cheese Soup 1 tablespoon butter, melted 1/2 medium onion, chopped 1/4 cup melted butter 1/4 cup flour 2 cups half-and-half (or 1 cup milk and 1 cup half-and-half) 2 cups chicken stock 1/2 pound fresh broccoli 1 cup carrots, julienned salt and pepper, to taste 1/4 teaspoon nutmeg 8 ounces grated sharp cheddar cheese (I used much less) Saute onion in butter. Set aside. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and slowly add the half-and-half and milk,then the chicken stock whisking all the time. Simmer for a few minutes. Add the broccoli, carrots and onions. Cook over low heat until the veggies are tender for 20-25 minutes. Add salt and pepper. The soup should be thickened by now. Pour in batches into blender and puree (or use an immersion blender). Return to pot over low heat and add the grated cheese; stir until well blended. Stir in the nutmeg and serve

I had a big buffet lunch, so dinner was a black bean salad w/ tortilla chips, and some hard-boiled eggs on the side. :) I didn't photograph the salad but should have! so pretty... made with what I had, so red & green bell peppers, jalapeno, mixed tropical fruit, and green onions, dressed w/ lime juice. The eggs were made this morning -- the Polish way. A basic color test run :)

Pam, we generally eat around 5. Today was super easy, threw the ziti in the microwave! Laura, don't ever worry about posting meals, a number of us have breakfast for dinner and that kind of thing. Less-than exotic meals! LOL Sue, I thought your meal was so good, real comfort food. Then I read "tv dinner". Too funny. Raven, Can you ship me some of your leftovers??? Ribs and brussels sprouts. Oh yummy. Laura we like tuna casserole, I make a roux and put hot sauce in, and peas. Gotta have peas in mine. Pam we like grilled pork chops better than steak! Are your potatoes on the grill as well? Lately I've been cutting the potatoes in slices and grilling them that way.

Plan is..grilled steak salad, potato salad...maybe some fresh rolls if I get my rump in the kitchen..

Met my neighbor, as we were walking into restaurant, so we dined together.

I had spinach rollups and greek slaw. Delightful!

I fixed asparagus, roasted with parmesan cheese, sliced green pepper, garlic toast and a glass of cold milk. 'Twas good!

What's applesauce meatloaf?

I made salmon patties, nice and crunchy on the outside! Some homemade coleslaw on the side.

Broiled Swordfish with Remoulade Sauce, Steamed Asparagus, and Rice Pilaf with a half of an avocado with balsamic dressing and a Caipirinha to drink.

Went out for dinner. I had a vegetarian sweet potato gnocchi dish. It was just okay.
