What's for dinner 6/1?

Happy June, everybody! Dinner tonight is going to be Spanish rice I POOF'd earlier and garlic toast. Didn't sleep well at all last night and it's affected my whole day. Blah!

What are you having?

Miss Myra's for her smoked chicken salad and crackers! Last week they were out of crackers, so I didn't stay. Gotta have my chicken salad with crackers!

I had so many things going on today, plus getting my 'big' grocery shopping done that I did a drive-thru dinner at Arby's. A regular roast beef. Added a glass of milk and half a banana to that there at home.

Good question! My son and daughter-in-law are coming for dinner at 6:30. I was making a favorite dish, Monastery style lentils, figuring we'd have that with a salad and popovers. But at 5:00 p.m. I remembered Monastery style lentils is definitely not a favorite of my son's. Oops! Quick change of direction. Now I'm making tofu and broccoli over spaghetti. No popovers. Date-Oatmeal bars for dessert.

Well....I'm not sure how this is going to turn out, but we bought a jar of Adovado Sauce while at Ranch de Chimayo a couple of years ago and it was sitting in my pantry haunting me. Soooo, I decided to use some pork tenderloin I had and cook it up using the sauce. It's a tad spicy but we love the red chilies from NM so we're in for a treat. I'll serve it with warmed flour tortillas. Someone pass the Tums please. :)

Is sausage and cabbage/kraut supposed to bring good luck? That's the first I heard of it, here yesterday. We had spareribs. Will pork bring us luck, or does it have to be sausage? Beans and oven potatoes with the ribs.
