Patti- my Dr's appt was with my reg. Dr as I am having trouble with my bp. I did make a appt with my orthopedic Dr for June 17 as my knee is now twice the size as the other one. I hope it is fluid that he can drain off & give me some relief.
For dinner I made this crazy named dish, it is called Chat n';Chew Macaroni cheese. This dish has a lot of cheese in it which hubby loves--not me. I have not made a icebox cake in years & I saw a new recipe for cho. icebox cake, it sounded good so I made that for dessert.

I'm headed to Mary's for dessert.

I also had mac/cheese tonight. I doctored up a bottle of spaghetti sauce with browned ground beef and mushrooms. Put some of that on top of my serving of mac/cheese. I was going to mix it together when I realized I could keep the sauce separate to put on a hotdog, or plain spaghetti, or over rice. Had a side salad to go with it.

Patti: I use rice to make stuffed peppers or unstuffed cabbage. I made up a batch of brown rice earlier in the week to put in the freezer.

I love having rice in the freezer too Patti. Along with the things you mentioned, I just heat it up as a side dish. I also put rice in my dressing that I use for turkey and stuffed pork chops.

I bought 2 large boneless pork loins that were on sale for $1/lb which is unheard of. Usual sale prices are $1.88/lb. So I cut them into boneless pork chops and have 2 roasts. We're having one in the slow cooker tomorrow and the other is in the freezer.

So tonite was pork chops with steamed carrots and mashed potatoes with onions that were soaking in olive oil and some salt stirred in. We love the flavour of potatoes that way.

I'd like to be at Mary's house too for some of that chocolate cake.

We stopped at the Village Cafe in the town next to us and had the Georgia Salad with salmon. It is soooo good and a complete meal, with the greens, salmon, bacon, hard boiled eggs, little tomatoes and bacon drippings salad dressing. Their rolls with the garlic flavored butter is just scrumptious.

Holy cow! I was out in the garage and heard something outside. A lot of garage doors around here (including ours) has a screen across it and works on tracks similar to a sliding glass door. I went over to look out and out of nowhere came an armadillo who casually walked across our driveway and laid down under the downspout next to the garage. Then, here comes another one. Geez, Grand Central Station for the aramdillos around here today. Anybody have a recipe--haha!

Mary, gear up--we're all coming for dessert (and maybe some mac and cheese if you have any leftover). That cake sounds delicious.

Shirley, your mac and cheese sounds good, too. I'm not too crazy about stuffed peppers but I do like stuffed cabbage. That's a good idea!

Jasdip, you really scored on the pork loin. Even $1.88 would be a bargain around here. You can get a lot of meals out of one when there are only two people.

Linda, funny you mentioned that Georgia salad with the salmon. I was talking to my sister on the phone this afternoon and she was telling me about a restaurant they went to for lunch one day last week and described that very same salad all the way down to the bacon dressing. They live in Indiana, so I guess they'd have to call it Indiana salad :-) It sounds delicious!

We went to Applebee's, I had never been to one before, well as we walked in a large group of people were leaving and were very upset they said they had waited for over an hour and never got anything so they were leaving. They suggested we follow suit. We were seated in the back near the servers counter, they were all freaking out about the table leaving but the waiter told the manager the kitchen just never would get their food out.
We had good service but the food was not very good. It was over $50 for the 2 of us, just not much of a meal for the price. I don't care to go back.
Right before we left I over heard a waiter saying one of the dishes that the people had ordered was the same thing I ordered, I think I know why I got my food so quickly!
