Right now, everyone is loving this:

Alaska cole slaw
5 cups shredded cabbage **I buy the preshredded plain, no carrots, etc at WalMart
1/2 cups almond slivers, toasted
1 1/2 cups dried cranberries
1/2 cup celery, diced**don't use
1/4 cup chopped green onions, white and green parts
1/2 cups chopped green bell pepper **don't use

This is the creamy dressing I used and it works great:

mix 1/2 c mayo with 2 Tbl cider vinegar **I used white wine vinegar, 2 tsp sugar, salt and pepper to taste Pour over coleslaw right before serving and toss JUST TO COAT

Combine cabbage, almonds, cranberries, celery, green onions, and green pepper in a large plastic bowl with a snap-on lid.
Combine all dressing ingredients, adding salt and pepper to taste, and refrigerate until ready to serve. Pour dressing over slaw just before serving. Stir well

Friend, who is getting ready for a week at the beach, made this to see if she thought she might add it to her menu.
She did and loved it.

My DS and GS both love this.

I have been loving little red potatoes, rolled in olive oil, sprinkled with a herb and spice blend that I like, then baked. I have a couple of miniature ripe peppers that will get the same treatment and put in with the potatoes when they are nearly done.

For the summer, I love shish kabobs with marinated (Italian dressing works great, or ginger dressing) zuke, yellow crookneck, onions, and mushrooms. Marinate the prepared veggies for two to four hours before skewering and putting them on the grill. Yum!

In the summertime, I like blanched and cold-shocked sugar snap peas and asparagus, potato salad made with mustard and dill or any grilled vegetable. I buy the pre-shredded broccoli slaw and mix it with a scant amount of bottled cole slaw dressing...just enough for one meal at a time. Giada showed an interesting raw sauce recently made with sun-dried tomatoes, olives, garlic and basil. She served it on pasta, but I think it makes a nice topping for grilled chicken or grilled bread.

This orzo pasta salad with veggies is really good. Plus, it's perfect at room temperature so it holds up well for parties.

I like veggies just as a they are. Raw, steamed or lightly sauteed. I love to pile on a complete "salad" of veggies when making a sub type sandwich. So I guess I can't help with recipes.

I do like to saute spinach in a bit of olive oil and add lots of garlic but that is about as far as I go to "change" a veggie.

I've made Glenda's Alaskan Coleslaw for two different occasions (a wedding rehearsal dinner and a 'darts team' party and have had several people tell me it is the best coleslaw they've ever had and ask me for the recipe. I do add the celery and the green pepper that are in the recipe (and that Glenda leaves out). Either way, it is one delicious dish!

Another favorite of ours is fresh asparagus. We lay it out on a cookie sheet, drizzle with olive oil, and sprinkle lightly with seasoning (we use seasoned salt, but any favorite could be used) and bake until tender/crisp.

And a third favorite... young potatoes sliced with the skins still on. Put in a foil pouch with a little margarine, a bit of salt and course ground black pepper, and dill weed. Seal up and cook on the grill until done.

I don't put the peppers and celery in cause I know DS won't eat them :o)

I made my own version of hot german potato salad last night.
I boiled about 8 small potatoes and cut into pieces.
cooked 4 slices of bacon, chopped it up and sauteed an onion in a little of the bacon fat.
put the potatoes and bacon back in the skillet with onions.
mix in a bowl about 1 cup sour cream, 2 Tbl milk, 2 Tbl vinegar, (add more if you like it sour) 1 Tbl sugar and 1 Tbl flour and some fresh dill - all roughly measured... Stir in potatoes and serve warm - eat the next day cold!

I know I'm preaching to the choir here, but the Gathering Place has a lot of good salads for summer. I love my cucumbers ($18 on the list). Looks like there aren't many vegetable recipes, but personally I like mine just plain. Or with cheese sauce :-)

I made the Alaska Cole Slaw tonight and it was a HUGE success. DH is a tried and true KFC cole slaw guy, but liked the Alaska more!! Thank you Glenda.
