What Do You Bake with Your Meatloaf?

I always put carrots and potatoes and some onion with my meatloaf. I also put a lid on my roaster at least part of the baking. How about you?

I put a can of Rotel in my meatloaf and serve with a salad.

Meatloaf sides are mac and cheese or fried potatoes w/onions. And spinach.

I agree, it will be fine. As Ann T mentioned, if it's cold from the fridge, it'll take a bit longer, but other than that it's fine. I do it regularly. Well, not really, I make the meatloaf and let Ashley take it to Kevin's to bake it, LOL, but it sits in the refrigerator all day until he gets out of work. She has learned that you have to have baked potatoes or roasted vegetables with meat loaf too, because the oven's on and you don't want to "waste" that heat/space. (grin) Annie

Read through and didn't see my recipe anywhere in here so I'll add it to your list for consideration. FWIW, my DH refused to eat meatloaf based on horrific childhood experiences but after trying mine 20 years ago he's CURED LOL and asks for it weekly. 1.25 lbs ground beef (I usually aim for 90% lean) 1 cup dry pepperidge farm herbed stuffing (blue & white bag) 1 can Campbells condensed tomato soup 1-2 tsp Worcestershire to taste 1 egg dash of milk (maybe 1 T at the most) 4 slices bacon I beat the egg in the bowl first, then add Worcestershire and undiluted soup and mix together. Then add stuffing mix to moisten and add beef to all for thorough mixing to distribute the egg mixture throughout. Add dash of milk and mix in. Turn into a loaf pan - I use a pyrex glass one because it seems to form a nicer looking finished loaf - and pat down gently using a fork to remove air pockets. Top with 4 slices of bacon and pop into the oven for 50 min at 400. After 50 min, take out and drain grease. Put it back in for 10 minutes to finish. Here's what I learned the hard way - you have to let it sit in the warm loaf pan for at least 10 min after removing from the oven to allow the meat to reabsorb the juices and set which helps decrease crumbling. After 10 minutes rest, invert loaf pan onto dish, cut and serve. I find that it works well to pop baking potatoes alongside in the oven to cook the entire time as a side! Bon Appetit! Jen

Well, I just wanted to report back that baked bacon is wonderful! I cooked a whole pound yesterday in about 15-20 minutes, very little mess, my kitchen is clean, and my house doesn't smell like bacon for days. Love it! I just rolled up the tin foil afterwards and tossed in the trash. I do agree though, fried bacon does render differently and is ultimately the tastiest. I'll still send hubby out to fry on the grill on occasion, but in a pinch, baked is the way to go. :-)

How Far Ahead Do You Bake Your Pies for a Holiday?

Pies are made when the time allows. This year I didn't work Wednesday so that was pie day. If I had worked I may have started earlier and made one each night..When ever I make them they will be "FRESH"! Pie/cake dessert is FRESH until it's cut in to! hahahahah But then I am a do what can be done ahead kind a gal. Last week we baked a turkey--stuffed so my stuffing is done and my gravy fixings ready. The mashed potatoes casserole is done and frozen at least a week early. Cranberries--two kinds were made Monday. All there is to do today is the fresh fruit salad and DH will grill/smoke the turkey we will serve. The daughters are all bringing the rest--done before they got here earlier this week. I have soup and pulled pork done and waiting for the meals for the rest of the weekend. I made an egg bake and over night oats and a variety of sweet breads for breakfasts. My kitchen is too small, cooking is too messy and time consuming to do it while company is underfoot.

I did shred some potatoes and carrots and onions and put inside of my meatloaf too.

Baked with, are more often than not scalloped potatoes.

Inside my meatloaf I like carrots and onions and celery if I have it. I use fresh bread soaked in milk, vs dried breadcrumbs.

Scalloped potatoes.

We still love the old "Ann Landers" meatloaf recipe. The leftovers are excellent for cold sandwiches.

I like other types of meat loaf but the one I fix at home is the old standby.

Most of the time, I just bake potatoes....But, I have made scalloped potatoes, also....

Potatoes here, too. Roasted, baked, scalloped or au gratin. I think I need to make a meatloaf soon, Sue! :0

Tonight we had meat loaf. I make mine with breadcrumbs, milk, egg, onion, green pepper, garlic, salt, pepper, worcestershire sauce, & ketchup. With that I had mashed potatoes & onion rings

I love cold meatloaf sandwiches with ketchup, and I will fix meatloaf just to have leftovers for the sandwiches. My younger son loves meatloaf with mashed potatoes and a green vegetable or salad.

I made meat loaf for dinner tonight and had rice as usual,I just think they go together perfectly.

It really varies a lot depending on the mood and what type of meatloaf I make. If I use the big oven I might make potatoes of some variety, or use the space for a second meatloaf or a turkey breast or something else to save time and energy. Many times I'll use the Nesco so lid's on and I might pack some little taters & veg around it or on top of it. Many of the meatloaves I make have gravy to go with them but if I go "Italian" style it might be marinara and even some pasta to go with it.

I don't really have "one" way of making things. Much depends on the mood, ambition, what's in the house, etc. I don't make special trips often to get one or two ingredients.

I don't put anything in with my meat loaf, the liquid is to greasy. I do add my veggies to pot roast, that's an entirely different flavor. Very good.
