I added garlic to both. From Nita AZ Party Bake Pork Chops Betty Crocker New Dinner For Two Cookbook copyright 1964 4 lean pork chops, 1" thick 4 thin slices onion 1/4 cup uncooked rice (not instant) 1 can (1 lb. 13 oz.) tomatoes 1/2 to 1 tsp. salt pepper Trim any excess fat from chops. Season chops well on both sides with salt and pepper. Brown on both sides in lightly greased hot skillet. Top each chop with a slice of onion, 1 tbsp rice, and cover with whole tomatoes. Add any remaining tomatoes and juice to skillet. Cover tightly; simmer over low heat or bake in foil covered baking dish at 350 degrees for 1 1/2 hours or until tender. 4 servings. How I do it. I don't brown the chops. I put them in an oblong baking dish and put sliced onions on them and then I rinse my oriental rice (Calrose or Hinode) to remove the talc. It won't hurt if you have a little extra rice. Then I take a large can of whole tomatoes and break them up all over the pork chops. I add some water to the can to get the rest of the juice and then cover with foil and bake. This is delicious served with soy sauce to taste. From Nita AZ 8 chicken breasts (I used thighs as we like those better) Coat them with grated parmesan cheese. Then dip into beaten eggs (I used 3 eggs). Then coat them with Italian bread crumbs. In a fry pan with some oil brown the chicken on both sides and remove to an oblong pan. Place a slice of Swiss cheese on each piece of chicken. In another fry pan melt a stick of butter and then add 1 pound of sliced mushrooms. Heat for a minute or two and then add 1 cup of white wine. Stir together for about a minute or two. Pour this over the chicken. Bake at 325 degrees for one hour. This is better if it is put together a day or two before baking to let the wine meld with the chicken. My friend covered it before baking so that is what I did. I didn't want the wonderful juice to evaporate while cooking. I should have put this together yesterday but didn't. I did do it earlier today so it has sat for at least 5 hours. I am planning on serving the juices and mushrooms in the pan over the steamed rice.

Well a fun time was had by all! Sure was great to see everyone again. Especially Nita and Mike, two of the nicest people! As Mike said this is becoming a yearly event and we definitely are happy to be a part of it. Marilyn had pictures of the new horse and the donkeys and of course wonderful animal stories. Brat was just as entertaining and funny as always, and I might hate her just a little because of her fabulous vacation she was on recently. She did one of my bucket list things. Unfortunately ntt didn't make it. Next year! Oh and the restaurant was excellent, it is going on our list of regulars. I had the special of the night seafood fettuccine Alfredo with shrimp, crawfish, and fresh mussels. The garlic bread was a meal in itself.
