Make a spaghetti casserole. They never seem to have enough main dishes. Or macaroni and cheese. Or a pot of baked beans. Something to fill people who are hungry for dinner.

Baked beans go with anything, IMO. A fruit salad; cole slaw; jello w/ fruit. Something I make that everyone who's tried it likes is what I called Yogurt Pie (no idea what it's real name might be)

Dissolve 1-3 oz pkg jello in
1/4 c boiling water (yes, only 1/4 c)
whisk til jello is melted
stir in 1-single serv container yogurt (same flavor as jello)
whisk til mixed
whisk in 8 oz cool whip
pour into grahamn cracker pie crust; chill.

I've seen recipes that use twice the jello & yogurt, but if you use lime jello/key lime pie Blue Bunny yogurt, you have a strong enough lime flavor. (you can tell it's my favorite!) IMO, to double it - at least for the lime - would be too strong. It's fast to make; sets up very well. You can add a sprinkle of crushed grahmn cracker crumbs over the top or leave plain. I use the SF jello, no-sugar added yogurt, & fat-free cool whip. Doesn't not affect the taste.

I find usually there are too many desserts and cold side dishes at Pot Lucks, probably because they're easier.

If you're looking for a main dish casserole, this Enchilada Casserole is good (save some extra cheese to put on at the last moment though--because the top looks a little strange if the enchilada sauce is on top). I've seen people bring in a bucket of Kentucky Fried Chicken too. Even if it shows you didn't cook, I think people appreciate having some real meat to chew on. You could also cook up a couple pork tenderloins and slice them. Or, you could buy some dollar rolls and make up a bunch of little ham or turkey and cheese sandwiches (but be sure to skip the tomato!)

I often take baked beans, partly cuz I know my own DH likes how I make them, so at least one person will eat them.

Recently I took pigs in blankets to an event just b/c I already had the stuff to make them, cocktail franks rolled up in cresent rolls, just the refrigerated dough sliced small to fit the litte franks. I think I had about 100 of them, but they were gone in a blink. I will do that again, that's for sure. I put out small bowls of ketchup and spicy mustard on the side.

I also rely on a pasta salad recipe that gets good reviews.

Chicken Ceasar Pasta Salad

Box of corkscrew pasta, cooked, cooled
2 cups chicken breast, cooked, cubed, cooled (or use precooked package/cans)
1 cup cherry or grape tomatoes, halved
1 cup cucumber cut in bite-size pieces
1/2 cup sliced black olives
1/2 cup feta cheese
1/4 to 1/2 cup ceasar dressing (judge that yourself)

Toss it all together, refrigerate.

I am going to make that Yogurt Pie, darn that sounds good and refreshing! If I can just pick a flavor to make first.

I usually take a dessert to church potlucks. Last night I took my double chocolate brownies and they are always a big hit. They are easy to make and don't take much time. If you are interested, I will post the recipe.

Taco Casserole?

1 pkg crescent rolls
1 pkg Doritos, crushed
1 to 1 1/2 lbs browned hamburger
1 pkg taco seasoning
1 pint sour cream
1/2 lb cheddar cheese,shredded
toppings as desired
Unroll rolls into 9x13 pan. Layer 1/2 the Doritos chips, then hamburger mixed with taco seasoning. Then sour cream,cheese and 1/2 of chips. Bake at 350 degrees for 20 minutes. Top as desired with chopped lettuce, tomatoes, onions,olives, etc.

Taco Dip

Base
1 - 8 oz. pkg cream cheese
1 - 500 ml. tub creamed cottage cheese
1 packet Taco Seasoning powder

mix together with hand mixer and spread in 9 x 13 pan.

Red/Green Peppers
Celery
Lettuce
Cheddar Cheese (grated)
Taco Sauce

Dice red/green peppers
dice celery
(layer the above on base)
finely shred lettuce
(layer on above)
Pour small bottle taco sauce on above
Grate cheese and add to the top

Use spoon to serve
Eat with Tostitos or Chips of Choice

Cold Corn Salad
1 Pkg Frozen whole kernel corn (almost thawed)
6-8 slices fried bacon (crispy & crumbled)***Used real bacon bits from the bag
fresh garlic cloves 2-3 (more if you like garlic)***use jarred
2-3 chopped fresh jalapeno peppers (with membrane and seed removed) ****I used chopped canned green chiles, drained
chopped olives (optional-black or green either one)***prefer the black
2-3 stems of chopped green onions ***Used chopped onions instead
1 C grated colby/jack cheese (marbled)***use preshredded fiesta style
Original Hidden Valley Ranch Dressing

In large mixing bowl combine all chopped vegetables with corn. Stir in enough dressing to coat vegetables well. ( I use almost half a bottle.) Then stir in grated cheese and crumble bacon on top.

Double Chocolate Brownies (16 servings)

3/4 C flour
1/4 tsp baking soda
1/4 tsp salt
1/3 C butter
3/4 C sugar
2 T water
12 oz pkg semi sweet morsels (divided)
1 tsp vanilla
2 eggs
1/2 C chopped nuts

Preheat oven to 325. In a small bowl combine flour, baking soda & salt. set aside. In a small pan, combine butter, sugar & water. Bring just to a boil & remove from heat. Add 1 C morsels and vanilla. Stir until morsels melt & mixture is smooth. Transfer to a large bowl. Add eggs one at a time, beating well after each addition. Gradually blend in flour mixture. Stir in remaining 1 C morsels & nuts. Bake in 9 inch sq pan 30-35 min. Cool. Cut in 16 squares.

I like to take pea salad......it is always a big hit. I really don't have a recipe but there are lots on line.
Here is how I make mine.
1 large package frozen petite peas
some celery chopped up
some water chestnuts chopped up
sweet onions chopped up
small cubes of cheddar cheese or your preference
Mix all with some mayo and sour cream to taste.
Chill and serve.
I think I add other stuff, too.....like chopped radishes or some finely chopped Italian parsley.
My sister makes it and insists on using Miracle Whip but I can't stand it.
Oh, I also top it with chopped peanuts or chopped cashews at the last minute and stir in or I guess you could put them on the side for those with nut allergies.
