Favorite bake sale item?

Amanda is looking for new recipes for her bake sale at work. She is being diligent. Lemon bars are going well, she is going to try keylime bars also. What is your favorite bake sale item?

When I go back, they have asked me to make cupcake size quiches for our morning crews... and also spam musubi. I don't know when I get to go back though. Until my pains go away, i just don't feel like cooking!!!

Banana Bread!!! I always buy that when I see it at a bake sale.

These are always a hit.

Peanut Butter Brownies
1 cup peanut butter
2/3 cup margarine or butter
1 1/3 cup sugar
1 cup packed brown sugar
4 eggs
2 cups flour
2 tsp baking powder
1 tsp salt
Chocolate Frosting
Grease 9x13 pan. Mix peanut butter & margarine till creamy. Gradually add sugars, beating until fluffy. Beat in eggs, one at a time, until well mixed. Set aside. In another bowl, stir together flower, baking powder and salt. Gradually stir flour mixture into peanut butter mixture until well blended. Bake at 350 Â° for 35 to 40 minutes. (Until a toothpick inserted comes out clean.)
Cool and frost with chocolate frosting. (I use the ready-made frosting found in the cake section of the store.)

I sew, I will do most of my own cooking and baking, and am 50, so maybe it's my generation. When pressed for time, convenience foods are nice, but I don't think I've ever brought anything to a potluck or bakesale that was direct-from-store. (Except one thing: for a potato-bake one time, I contributed the fat-free sour cream and light margarine - which, btw, were also the first to be emptied.) Our schools do allow homemade goods for parties and birthdays. But all volunteers in the classrooms or anywhere around school must be fingerprinted AND have a TB test every 3 years. They also must never be alone in a room with a child (which is a good rule for us teachers, too). Teachers who have a child with an allergy are encouraged to let the other parents know, "This room has a child with an allergy to (x), so please mark your contribution if it includes (x)." Most kids are very good about not eating something if they know they're allergic to it. I think the annotation on a flyer "homemade goodies sell the best" is a good idea. I like to buy all kinds of fresh-baked goods at farmer's markets. I end up making lots of scones and muffins for teachers' meetings, so I just wanted to add a few recipes here. I have some sources (if I do, I'll name it) and some I do not (just didn't note it at the time I saved the recipe). I didn't create the recipe and I may or may not have tweaked these recipes. These always work out great for me! I also added a couple of other recipes I make a lot when I need something in bulk. Hope some work for you! I love, love the vanilla ones (I usually double the recipe)...but the huge hit...pumpkin scones. I doctor up the spice glaze to make it spicier and darker in color than written below. I get asked to make these for every event. (I usually triple the pumpkin recipe since these tend to be more in demand.) There's an old-fashioned crumb cake (I think that's what it's called) in the KA cookbook that I make all the time, too. It's similar to one of the recipes posted on the coffee cake thread. ******************* Scones ====== 1 cup unsalted butter, cold 4 Â¼ cups unbleached all-purpose flour Â½ cup sugar 2 teaspoon baking powder Â½ teaspoon baking soda Â¼ teaspoon salt 2 liquid cups heavy cream 1 cup chocolate chips (see variations) Equipment: 2 half sheet pans lined with nonstick liners such as Silpat or parchment a baking stone or a baking sheet Oven Temperature: 400ËF Baking Time: 15 to 20 minutes Servings: 12 or 16 4-in by 1 Â½-in high scones 1. Chill the butter. Cut butter into 1" cubes. Refrigerate for at least 30 minutes, or freeze for 10 minutes. 2. Mix the dough. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Add the butter and with your fingertips, press the cubes into large flakes. (Or use an electric mixer, mixing until the butter is the size of small walnuts.) Stir in the cream just until the flour is moistened and the dough starts to come together in large clumps. Stir in the chips. Knead the dough in the bowl just until it holds together, and turn it our onto a lightly floured board. 3. Preheat the oven. Preheat the oven to 400ËF at least 30 minutes before baking. Have an oven rack at the middle level and set a baking stone or baking sheet on it before preheating. 4. Shape the dough. Lightly flour the top of the dough (or use a floured pastry sleeve), and roll it out into a long rectangle 1 inch thick and about 8 inches by 12 inches; use a bench scraper to keep the edges even by smacking it up against the sides of the dough. Fold the dough in thirds, lightly flour the board again, and rotate the dough so the closed side faces to the left. Roll it out again and repeat the "turn" 3 more times, refrigerating the dough, covered with plastic wrap, for about 15 minutes as necessary only if it begins to soften and stick. KILLER CUPCAKES (makes 20-22) Cupcakes: 4 squares (4 oz) semisweet chocolate 1 tsp vanilla 2 sticks butter 4 eggs 1 1/2 cups sugar 1 cup flour Preheat oven to 350°. Line standard muffin tins w/paper cupcake liners. In the top part of a double boiler over simmering water, melt the chocolate w/the vanilla & butter. In a large bowl, beat the eggs until thick & add the sugar. Beat in the flour. Fold in the butter-chocolate mixture. Spoon into the prepared tins, filling the cups 2/3 full. Filling: 8 oz cream cheese, softened 1/4 cup sugar 1 egg, beaten Dash of salt 3/4 cup semisweet chocolate chips Mix the cream cheese, sugar, egg & salt until just blended. Stir in the chocolate chips. Drop a rounded teaspoon of filling onto the top of each cupcake. Bake 30 minutes.~~ San Francisco Encore MARLEN'S RASPBERRY LOVE MUFFINS 2 cups flour 2 teaspoons baking powder 1 heaping cup white chocolate chips 1 stick softened butter 3/4 cup sugar 1 teaspoon pure vanilla extract 1 Tablespoon finely grated orange zest 1/2 cup milk 2 cups fresh or unsweetened frozen raspberries Sift flour with baking powder and mix in the white chocolate chips; set aside. With an electric mixer, beat softened butter with sugar until light and fluffy, add vanilla and orange zest. Mix in dry ingredients in two additions, alternating with milk. Fold in raspberries. Do not overmix. Spoon into greased muffin tins and bake at 375 degrees F. for 25 to 30 minutes. Cool for 10 minutes before removing from tins.~~ These are REALLY popular: MARLEN'S CHUBBY HUBBY COOKIES 2 cups butter or margarine, softened 1 cup sugar 1 cup light brown sugar, firmly packed 2 large eggs 2 Tablespoon vanilla extract 4 cups all-purpose flour 1 teaspoon baking soda Pinch of salt 1 12 oz pkg semi-sweet chocolate chips 1 12 oz pkg peanut butter chips 1 cup salted peanuts 2 cups crushed pretzels* Preheat oven to 350* degrees. In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. In a medium bowl, combine flour, baking soda and salt. Blend into creamed mixture. Stir in chocolate and peanut butter chips, peanuts and pretzels. Drop by heaping tablespoons about 2 inches apart onto ungreased cookie sheet. bake 10-13 minutes, or until edges are lightly browned and centers are still soft. Do not overbake. Cool one minute on cookie sheet. Cool completely on wire racks. Store tightly in covered container. Source: Bob Zotto, Bruker AXS Cookbook Note from Marlen: The pretzels should be about the size of the chocolate chips, not pulverized. You want to taste bits of pretzel as you munch. This is a crunchy cookie. I use a food processor and just pulse until the desired size is achieved.~~ TOFFEE BARS (3 dozen - freezes well) 2 cups flour 1 3/4 cup packed light brown sugar 3 sticks butter (don't use margarine for this) 1 cup pecans, chopped One 6 oz pkg semisweet chocolate chips Preheat oven to 350°. Mix the flour & 1 cup of the brown sugar; cut in 1 stick of the butter until the mixture resembles fine crumbs. Press into the bottom of a 13x9" ungreased baking pan. Sprinkle w/the pecans. Bring to a boil the remaining 2 sticks butter & 3/4 cu of brown sugar. Boil exactly 1 minute (after the mixture comes to a boil), stirring constantly. Pour over the pressed mixture & bake exactly 20 minutes. Let sit 1 minute; then sprinkle w/chocolate chips. When completely softened, spread the chocolate with a spatula. I can't really think of much to add-the dessert all sound yummy! If there is a Trader Joes near you, I just bought some of their mini peanut butter cups (about the size of a chocolate chip) I was thinking I'd put one on the middle of a peanut butter cookie. They are SOO cute! Or you could use the Hershey Kissables-a candy coated colorful mini Hershey kiss. The chocolate covered pretzel rods sounds like something pretty fun and different. Would chocolate covered strawberries be too much work or too much $$? I love those! My mom used to make Angel Food cupcakes. They were really yummy and good for those watching their calories. Homemade donuts hands down!
We used to have a older gal in town that made the absolute best donuts. Every Friday morning she would make them and her street was the busiest in town on Friday afternoons! LOL She would sell by the dozen.

Chocolate chip bars...same recipe as chocolate chip cookies except baked in a jelly-roll or bar pan, dusted with confectioner's sugar, and cut into brownie-sized bars.

Here's a recipe I make alot at home..and made it last week but doubled it and sold some at the Concession stand..

Happy People.. for 50cents a square..

For home use, I usually put cream cheese frosting on, but for the concession stand I used the one in the recipe. It's a great "butterscotch/caramel" flavored frosting.

I also use half wheat and half white.

Raspberry coconut squares can't get by me at a sale - they have a pastry type crust, raspberry filling and a baked coconut top.

I don't usually buy things at bake sales. I know it's for a good cause, but I like to know who the cook was. But those raspberry coconut squares may have to go home with me! Do you have a recipe, Suzan?

Turtles, ya know, w/pecans and caramel. They are my favorite b/c although I love them, I don't make them myself, just never learned how. So it's a treat to get homemade ones from someone else.

And there is something about the simplicity of rice crispy treats that makes everyone happy.

I agree, Stephanie, I do love rice crispy treats--plain, no icing or chocolate chips.

I think people like to buy what they can eat there. So cupcakes instead of cakes. I like an old Bake Off winner that is basically a plain cake in a large baking pan and you spoon dollops of canned cherry pie filling evenly across the batter. Cut into cake bars with one dollop of cherries per serving. Looks so pretty too.

Cookies, rice crispy bars (can't think of name, cupcakes don't sell here, pies do, rhubarb bars apple crisp, date bars, candy and anything Norwegian.

You are all great. Now I am really hungry. She went with the old standby of lemon bars and keylime bars to take to work tomorrow. I have never heard of potato candy.

I haven't made this particular recipe but it sounds just like what I can't resist...also, here's a Potato Candy recipe. Never heard of it either, so I don't know if this is what the gals are speaking of...
POTATO CANDY

1/2 cup mashed potatoes
powered sugar
peanut butter

Combine 1/2 cup mashed potatoes and power sugar till is firm enough to roll. The mixture will become very wet; just keep adding powdered sugar. roll out on powdered sugar like noodles. Cover with peanut butter. Roll into jelly roll cut into small pieces. Very rich!

Traditional baked items like brownies and chocolate chip cookies. They always sell well. Peanut butter and chocolate chip cookies for something new.
