The other thing that sells well here is homemade jam or apple butter, if you happen to be a canner. Here muffins sell well in the morning, along with scones. Quick breads like blueberry/lemon, chocolate, banana, all sell well, as so cookies packaged 4 or 6 to a package, and homemade fudge. Everyone seems to like brownies and I usually just bake plain white bread or honey wheat and those loaves or dinner rolls seem to be among the first to go, I guess people will make cupcakes with a mix and some canned frosting, but they won't take the time it requires to bake a loaf of bread. the butterflake rolls are good and easy and sell well: Butterflake Rolls 2 packages active dry yeast 2 cups warm water 1/2 cup sugar 2 tsp salt 6 to 6 1/2 cups flour 1 egg 1/2 cup shortening (use butter) 1/2 cup butter, softened. In mixing bowl, dissolve yeast in warm water. Add sugar, salt and 2 cups flour. Beat on medium speed for 2 minutes. Add egg and shortening, mix well, stir in enough flour to form a soft dough. Do not knead. Cover and refrigerate overnight. In the morning, punch dough down and divide into 4 portions. Roll each portion into a 14 x 12 inch rectangle, spread 2 tbls butter over dough. Fold in half lengthwise and cut into 12 strips. Tie each strip into a knot, tuck and pinch ends under. Place 2 inches apart on greased baking sheets. Repeat with remaining dough. Cover and let rise until doubled, about 1 hour. Bake at 400 for 10-12 minutes or until golden brown. Yield: 4 dozen Annie

Hi, Madonna, Glad to read you've had really great success with the bake sales at your church! Your summer tort sounds like a great idea--if you don't mind sharing the recipe, or pointing me to a website with a good T&T recipe, I'd appreciate it! While I'm picking your brain, do you have any sugar free recipes that taste good? One of my diabetic acquaintances used to make sugar free chocolate chip cookies every year for Christmas, and I'd try them but they were ghastly, so I always said I was going to save them for after dinner! The coffee cakes didn't seem to go over well. I think small cheesecakes would sell really well, but since we don't have refrigeration available, they'd have to be kept in an igloo on ice, and after the 5 PM Mass on Saturday, brought back again the next day for the Masses on Sunday. Here's a photo of the dog yummies I made last year--I didn't set the prices, but maybe they were priced too high? They were very very dry if a person wanted to munch on them! I can't really think of much to add-the dessert all sound yummy! If there is a Trader Joes near you, I just bought some of their mini peanut butter cups (about the size of a chocolate chip) I was thinking I'd put one on the middle of a peanut butter cookie. They are SOO cute! Or you could use the Hershey Kissables-a candy coated colorful mini Hershey kiss. The chocolate covered pretzel rods sounds like something pretty fun and different. Would chocolate covered strawberries be too much work or too much $$? I love those! My mom used to make Angel Food cupcakes. They were really yummy and good for those watching their calories. If you know how to (have the equipment for) pasteurizing eggs, or can buy them, both the pie and the meringue would be stable. How long will the slices be out of the fridge? If it's a couple of hours, it's fine either way, even given awhile to get to their destination. If it's much longer, all that raw egg is a bad idea. Whipped cream (unstabilized) might look worse at that temperature than meringue. If it all seems too much, how about decorating with a thin twist of lime zest. Key limes aren't all that pretty, so you could get a Persian lime for decorating if you want, and have more color contrast to the pie as well.
