Happy Thanksgiving - Just about to start the turkey but in the meantime, we also made a paella version last night- but instead of rice, I used pearl couscous. This was my first paella in my newer kitchen. My niece made the mini popovers.
Key ingredients are similar - no specific recipe and not much was measured. I sometimes use rice and other times couscous - the family voted on couscous.
Scallops, shrimp, and lobster tails
Squid rings, and chopped clams
Pearl Couscous
4 cups chicken stock (no sense in using veggie since didn't qualify as a veggie dish)
About a cup of chopped tomatoes
Smoked paprika
Pepper
Toasted and crushed saffron
Diced red pepper, onion, and chopped garlic
And almost forgot - kksmama mentioned peas - I did put in peas for color.
