Faucet hole drilled in wrong place! =(

I just had silestone countetops installed in my kitchen, on top of an undermount farmer sink. Pure, solid white quartz (no grain pattern visible).

Installer drilled the faucet hole 6" from the edge of the sink, instead of ~3". My faucet has an 8" reach and barely reaches the tub. I can't wash vegetables without spraying water everywhere.

GC doesn't think they can plug the hole and make it look decent. Say they would need to make an entire new countertop (it is a complicated piece, $1500 of material).

Anyone know of a good way to plug the faucet hole?
