cherry cabinets, does a light stain help mellow aging?

Once again cannot decide on the wood choice. Have natural red oak hardwood.

Looked at red birch w/slight stain-- too similar, natural too grainy w/ our floor.

Decided maple, could not find the "perfect" stain. Either too light or too similar---

thought I wanted a light stain, but too monochromatic or too brown.

Moved to cherry with a light-medium stain (autumn) or natural.

DH is waffling as he is unsure about the darkening and the uneveness.

Does a stain (not too dark) help to even out the mellowing of the cherry wood?
