I re-read my post and the discreet under cab space sounded funny, so I am posting a pic of what it will look like. I will have 2 cubbies at the back of my island which are 36" wide, 18" tall and 12" deep. The brown back of cab you see will be hidden by the high back of our stove, and that cab faces outward. There will be lower wall cabs facing away from the kitchen and accessible on the other side (which can't be seen in this pic) while the 2 "cubbies" add to my counter space. The plan is to make them level with the counter by adjusting toe kicks on the back side accordingly.

I want to put the pull down knife tray on the right side close to the stove (S & P, oil & vinegar underneath knife tray) and was looking at what to do on the other. I will have space so am figuring as much as possible what to put towards the back. I have to figure my counter appliances will not be inside the cubbies, except my KA mixer may hang out back there (right side far end) since it is not an everyday item. My toaster might be recessed a little as well at the far left end (closest to the table) so that it is accessible by more than just the cook and if on the end, my sons can reach in sideways and have an easier reach. I need to put utensils somewhere and my food processor, which I use a lot. I can fiddle with the placements of those and the spices.
In any case, the spice carousel is nice enough to be seen but will not be out in the open. At 5.5" high (out of an 18" cab), I'd still have clearance underneath for some cutting boards or other stuff. Since it will be diagonal behind the stove, I am hoping any heat from the cooking will be far enough away to not ruin the spices. I imagine I'd put the often used ones in the carousel anyway.

I have those! I have two that are stacked in one of the cabinets flanking my hood. They fit perfectly there. I really like them, and it totally cracks me up how many people "oooh" and "ahhh" over them! To take them out, you just lift the back--kind of tipping it toward the carousel, and it lifts right out. You can dial the measurement in 1/4 tsp increments, and it comes out a little compartment on the bottom. The top has a lift two lids--one with a larger opening, and one with a slotted opening for sifting. Yes, you lift them off to use them.

It comes with preprinted labels and blank ones to write your own. I quite like mine. I have to run right now, but later I will try to take a photo.

How accurate is the measuring?
They seem like a really great idea and I could use lots of spice options as I tend to accumulate spices and will need room and organization for them. Mine are currently in a lazy susan in my corner cab, but I often end up spinning and spinning it trying to find the one I want. My pretty chrome carousel is a countertop kind and can have the smaller spices in it. I bought it 3+ years ago in anticipation of the new kitchen, but it is all sealed still so I hope the spices stayed nice., lol.
Now, if I could only find the under cab knife tray I want for a better price than at cooking.com, I'd be making some real progress!

I like your cubbies, but I'm not sure they are the best spot for all those items. Are your cabinets ordered? Is there a reason not to have a drawer stack there? Do you have all those drawers filled? I may be seeing things differently than you intend, but I'd be concerned with the ease of using everything in those spaces.

I have my knives in a drawer block and the spices in another drawer (everyone probably knows that already, sorry) and they are so handy that way. I'm thinking your processor looks like it is space challenged there and the mixer will be tight (make sure you get 18" clearance and not 18" minus the top and bottom). Also, if you have things on the counter in progress and anything is tall, it could be a pain to have to clear the space in front to remove the other items. I've never seen an inexpensive under cabinet knife block, but I have seen the drawer ones inexpensive. Make sure you can actually get utensils out too.

OK, I just took a picture of the set-up I have. It's pretty pedestrian, but it works for me.

To tell you the truth, I have not really used the "dial a measurement" thing. It is much easier and faster for me to just flip the top and measure that way, so I cannot vouch for the accuracy of that particular feature.

As you can see, I have mine stacked, and they do turn independently of each other. These are spices that I don't use constantly. Spices that I use on a regular basis are in different pullouts next to my cooktop in larger bottles.

One unit holds 12 spices. Two units hold 24. In my world, that's a lot of space for 12 or 24 spice bottles-worth of cubic inches. But if it works for you, hey, it works for you.

Am curious as to what particularly draws you to this--the convenience? gadgetry? access to spices you don't usually use? accuracy in dispensing? the clean look?

Personally, I'm trying to eliminate plastics in my longterm food storage. But I won't show you the spice storage I'm using right now and I may not ever show you. (embarrassed blush)

Shelayne - Thanks so much again ;) I may get 2 thanks to your photo, lol. I would use it for my more often used ones because these look convenient with all the measuring/shaking options. I could alphabetize and since they are not loose like my current lazy susan setup, they would actually stay in order, lol.

Lascatx - I have 36" drawer stacks in the island itself and pretty much all over the kitchen. I have the cubby space and am trying to figure out how to best make use of it for counter items.
The KA mixer can fit in front if not all the way in. I use it much less than the processor, so hope it will make it inside. My processor will be at the back of the open space and not recessed in, but it may be half in and half out. I use that almost daily. The cubby would definitely have enough room for it.
The toaster has an angle on the top, so it will be easy to get the toast in and out.
My micro will be on a shelf near my wall oven, so that is one less counter item in this area.
I think my drawing looks smaller than the reality will be because my stove is 36" wide and here it looks like normal width.
The pull down knife tray I want is not only expensive for what it is, but I can't seem to find it available! I was resigned to getting it from cooking.com, but realized it is not in stock. I have searched several ways and each place that lists it does not actually have it. The reviews for it were good, so I don't know why. I found the hinges made by the same mfr, so may have to have one configured somehow for me. I think it would work perfectly in my space and I would so love to ditch the knife block for prep knives and just keep one for steak knives in another area, near the cutlery. I have a ton of cooking utensils and gadgets that I plan to put in the top drawers, along with pot holders (so may not have any utensils out on the counters after all).
I might just wing it after it is all done and play around with how to lay it out. It will be so nice to have space and placements as optional. For the past 4 years, my use of this smaller space feels very forced.

Florantha - I think the carousels look neat and orderly and seem to have a lot to offer in function. They will be semi hidden but easily accessible. My current spice storage is 6 feet away from my stove, is over the sink and is a real pain. I will be so glad to have things at hand and visible.
