Thoughts on our kitchen layout

Help! The stem wall is poured, plumbers are coming this week and now I'm second guessing our kitchen layout. I really like the general layout, but I'm concerned that I won't have enough landing space next to the cooktop. Is 15" on both sides enough? The one kitchen designer we worked with that helped us come up with this layout told us 15" was about the minimum he'd suggest. Does that sound right? Should I decrease the pantry size a little to gain a few more inches? I'd really like to keep the main sink at the window, because it looks out over trees and a pond. The island will be configured differently, our builder just threw that in there for now. Right now it's drawn as a 2'x6', but I'd like it at least 36-42" wide which would give us 42-48" clearance around it, and at least 6' long with a section at the dining end being wider to accomodate a couple of bar stools. So that when you're sitting at the island you're facing the cooktop. Hope that makes sense.
