Are you talking about the oven (and not the grill or griddle)? If so, the main over doesn't take any longer to preheat than our older non-pro oven (which was a stand-alone unit and not part of a range). However, one nice thing about the 48 inch ranges is that you get a much smaller side oven that will be sufficient for most oven uses (it will hold a full sized pyrex dish). That oven heats up much quicker than any oven I have ever worked with before. But as to exact times, I haven't the faintest clue. If I remember, I will measure the heating times this evening after I get home from work. Jay

I purchased a wolf dual fuel 48" 9 months ago and after several service calls, Wolf did a buy back on the range. It was kind of strange, I would have been ok with another range but they did not want to switch it out. They were very nice, tried to service it but never really looks at the internals, instead would send a chef out here to cook in it and troubleshoot it. My issue was mainly the convection. Cook on one rack, no issues, cook on all of them like cookies and extremely uneven cooking from top to bottom and back to front. Not satisfied. Hated the lack of rolling racks, I find the racks hard to pull out. Had the double griddle. Fantastic to cook on but the grease catcher does not catch grease, instead it fills up, overflows underneath and makes quite the mess, even when the catcher is not full....they even mentioned that it is a design flaw. The actual service help after was good in most respects, would I buy another wolf? maybe some day, but not that range for sure. Also, took forever to heat up and boiling a pot of water took too long for such a beautiful unit. I am now purchasing a capital culinarian...hoping for much better results.....

@mswaim - NJ is the same deal as NY. Like I said in another thread, there are a bunch of dealers in the NJ-NY area that are on credit hold with Wolf b.c they can't pay the bills. That may be why they aren't mentioning it. But as of the last visit he pushed you to it? Strange. As for the warranties, I think they are a good idea. My dealership never made a point of pushing them bc we thought that the consumer mindset (thanks in part to Consumer Reports' negative slant on warranties) was that they were a gimmick for the dealership to make $$. We've changed out mind about that due to 1 reason - the current cost of servicing appliances. I have had customers call me after being rocked for $250-$300 on 1 visit on a dishwasher. They would be begging me to sell one to them but we can't do it after the point of sale. If dishwashers can cost that much can you imagine what servicing a pro range or a SubZero can be? I have had customer's send me service bills on Subs and some have been over $1000. So, the long answer is, I would buy them. $399 sounds high especially since you are overlapping the manufacturer warranty. In effect, you are buying a 4 year warranty and we sell 4-year warranties for $325. I would negotiate with them on the price of those. Also, question them as to who the insurer is...if it's the store's personal warranty that's basically garbage. What if they go under in 2 years? The most reputable warranties currently available are from Warrantech (good) and Assurant (better. Good luck!

If your you are interested in high BTUs, stir fry and use cast iron, I would consider a BlueStar RNB rangetop. https://www.bluestarcooking.com/cooking/rangetops/48-rnb-rangetop/ 22K BTUs but uncapped burners so flame is more upright. It is star shaped so better heat distribution for your cast iron pans. You also mention boiling pots of water so this seems to go with your cooking style. This shows the burner compared to Wolf. It has an open burner tray so it breaks down for cleaning. Wolf has a sealed burner tray, so does not. This is how it is cleaned.
