I wouldn't. The holes will likely fall very close to one another and will want to offset into the old locations. Once you start opening up the holes and they get misaligned, the door or jamb are going to need to be repaired. Keep searching, you should be able to source what you need.

If the minimum A spec is 37 3/8", then you'll need that much space if you want the drawer to clear the other cabinetry. The cabinet is only 27" wide, but it is intended to be pulled to a minimum distance from the corner. But since you're trying to stick a wall oven in there, you'll need more than that because the oven will stick out further than the cabinetry. You'll probably need to dead the corner and just use a 9" base and filler on the right side of the corner, and even then you may not be able to open the base door all the way. That size blind corner usually has such a small door opening that it's just as well as dead space.

I think the exposed hinges will look most authentic for your kitchen. You have a lot of drawers so it will not be as busy as if it were mostly doors. The countertops are soapstone on the perimeter so I think black would be fine. In essence I feel you are trading a heavily patterned floor in the picture below for a heavily patterned backsplash in your kitchen, so it's a sort of update and reworking of the real thing. Below, the hardware is probably chrome or nickel but I am afraid that might fall a little flat on the yellow cabinets.
