Faucet without plate for difficult sink?

I really don't understand kitchen faucets. I have a big double sink with room for the faucet on the back of one on the sinks. The faucet I have now has a plate and if there are holes under it, the faucet would be in the middle hole. As such, it extends over my smaller sink which is right in front of it just fine, but it really doesn't reach worth a darn over the bigger sink. I thought I needed a longer spout, but then I was looking at set-ups at Lowe's today and I see that they put a faucet without a plate so that the faucet comes out of the hold right next to the bigger sink, thus reaching both sinks. So, I think that must be what I need...to get rid of my faucet with the plate that makes the faucet too far over and only able to really reach the little sink. Is that right? I also have a sprayer. To find out how many holes I have, I need to get under the sink and look up? I thought I only had three, but then if that's so, what is coming up through the holes?

Agh.
