Comments (3)High pan temperatures lead to hot rising and expanding effluent (grease, odor, and water vapor) that can have a velocity of 3 ft/s. Generally, capture of this flow requires an encompassing hood aperture and ventilation air flow rate high enough to ensure containment and rejection to the outside. Downdraft ventilation systems, whether in the countertop or vertically placed behind the cooktop, are in the wrong place to do this efficiently. With sufficient airflow, they can capture and contain rear burner effluent in proportion to the vector sum of their induced air velocity (which falls off rapidly with distance) and the effluent velocity at each point over the pan. The only difference between gas and induction in this situation is that the gas flames can be affected by the transverse flow of a downdraft ventilation system. Pan temperature and hence effluent velocity can be the same for the same cooking process. Comments (2)If it was a choice between having a recirculating system or venting through the garage, the latter would definitely be my choice. You shouldn't vent into the garage itself. Vent to an outside wall of your garage or perhaps you could go out the garage roof. Can you return your purchased hood vent in favor of something that would work with your existing ductwork? Possibly using an external or in-line blower if that would work? In my situation, my ductwork runs from an interior wall up two flights, attic to an external blower on the roof. It has 3 elbows as well but works well. A better option than reusing my old downdraft or a recirculation system IMO....See Morereplace a downdraft gas cooktop with electric/induction or telescopic?
Comments (23)We had an early 1980s downdraft electric cooktop, and once it caught fire, we decided it was time to replace it. :) There weren’t a lot of options that were the modern equivalent. We ended up installing an overhead vent hood and an induction cooktop. I loooove the induction cooktop because it’s SO easy to clean AND because it’s so responsive. I don’t think I’d ever prefer to cook with gas now....See Morepalikate
