ikea birch vs john boos maple advice

it's for an island i'm building & i can't decide! before i didn't have a choice (ikea stock was out for mths) but i checked last night (after reading here some were back in stock ;)) & it's back in. now that i have a choice i'm having trouble deciding! if it were a matter of hundreds of dollars this would be easy.

ikea birch 49x25 5/8 vs jb maple varnique 48x25 (both 1.5 in thick)

-for a kitchen island (but i won't be cutting directly on it)

-cost diff is $80 (ikea $89, boos $169 from local Meyer)

-my perimeter cabinets are expresso w/bianco antico granite, cherry stained wood floors

-going for a lighter finish because the kitchen is small & i already have dark cabs. island base will be creamy white

-house is old, but we've updated...so transitional style

initial thoughts are that

-i won't have to treat the boos, website says it's "virtually maintenance free".

-i won't have to cut the boos because i just need 48 in. (but my handyman can cut w/out any issues).

-both are light, but is the maple warmer?

-will both have the potential to warp? nervous about that
