How to darken maple Boos countertop?

Hi, All:

After about 8 weeks, we've arrived home to a virtually complete kitchen. Yay! Now it's time for a few tweaks. Along the peninsula, there's an upper level 8' x 15'' counter in maple Boos board. This piece is very light, basically natural. I'd like to darken it a bit to give it a more "lived-in" look. This area will be for serving plates of food, putting out appetizers, eating a quick lunch, etc. No food prep.

I've re-read a number of posts about how to treat wood, but they seem to mostly relate to walnut, which is a bit too dark to begin with. I would appreciate your input. I don't think I want a full varnish look... certainly nothing shiny... and I definitely want to avoid anything that might yellow.
