Installing Laminate in L shape that is not square

Hi all -

We are ready to do our countertops. We have laminate tops already cut into 45's to install into our L shaped perimeter. Our corner is greater than 90 degrees, plus there is slight wavy-ness in our walls. So, when you put the countertop up against the walls, there is a small gap (1/4 - 1/2 inch) in some areas between the wall and backsplash of the laminate.

So. We were wondering if we could put together our miter (with the glue and bolts) then cut it to size, put it in, then use quarter-round on top of the backsplash (painted the color of our walls). We would first caulk under it, glue the quarter-round on, then use clear caulk and caulk again on top of the quarter-round where it meets the wall and top of backsplash.

Would this address both issues effectively? (wavy walls, and greater than 90 corner?)

Are there any other solutions?

We are trying to avoid scribing and trimming the back of the backsplash to fit. It just sounds like a chipping disaster for the laminate tops.

What size quater-round would we need for this trimwork?
