Few questions:
Is this a straight run, "U" shape, "L" shaped?
These are preformed tops I take it...any seams?
Backsplash?

We did it ourselves 7 years ago . . . with the preformed stuff. Measured and took the order to Lowes and are completely happy with what we got. We are redoing the kitchen now and would be perfectly happy doing the same again.

Buying the laminate and putting it on the counter (ply) itself might not even save you much money . . . as opposed to buying the preformed stuff. But I don;t know.

If you are confident with your measuring skills and are reasonably handy putting stuff together (which your DH must be!) DIY laminate countertops are just fine.

We've actually done it twice. Once back in the 80's we glued down new laminate on top of the old counter and put on a oak trim piece as edging. A year ago we had Lowe's fabricate laminate countertops to our exact measurements and took off the old counters ourselves and installed the new ones ourselves. Very easy on a DIY scale. Just make sure your measurements are exact and that you have the fabricator cut the notches in the underside for the corner miter bolts that pull the seams together.

I agree with cordovamom that it's on of the easier DIY projects. My husband has done laminate counters countless times...only once with the preformed kind. I would think a skilled furniture maker could manage it after researching the proper techniques, and adding the proper tools to his collection.

He probably has the common sense to only try to bond to a very smooth, flat surface...No grit, no divots from careless sanding, no dents from screws or nails...Fill and feather them out. Never rely on factory cut edges, cut them yourself. Use adequate adhesive on areas, like edges, that will take the most abuse. (Adhesive on both surfaces--double near edges, let dry, put dowels or something under the laminate as you lay it over the surface so it doesn't bond before you have it just right.) Route the edge carefully so you don't dig into the self edge or other facing edge. File the edges smooth. When you do a seam, cut both layers at once, so they fit together like a puzzle...any wobbles in your cut will be identical and fit nicely together.

These are just quick, off the top of my head, things I've learned when we've done these projects over the years. Please do more research so you're comfortable before taking it on...But I have faith your dh can do this.
