Changing from 220V to 110V for Range

I'm redoing my kitchen and moving the appliances around. I need a lot of electrical changes. The first is the Range.

I am moving the range to a different wall. Currently its on two 40A circuits and the cable is HUGE. I am switching to a gas range that uses standard 110V. I am also adding an over the range microwave.

My question is how would you re-wire this? Should I just move the big cable to the new spot and split it into two separate circuits? One for the microwave and one for the range? What about the big mambo-jambo cable? How do I go about wiring this into a receptacle? Finally, do I have to replace the breakers in the service box to 20A?

The service is on the opposite side of the house so I wanted to avoid running a new circuit/wire if possible.

What would you do?
