What's the best way to finish Cherry Butcher Block countertops?

I have replaced my entire counter tops with American Cherry Butcher Block. The product came unfinished and a lot lighter in color then advertized. I wish to stain a bit darker and seal to protect especialy around the sink area.

Can anyone recomend the best way to go about this? It would be nice to save one section for food prep but not toaly necessary since we have plenty left over to make cutting boards out of. I understand that for food prep mineral oil is the best thing to use. but, can I stain under that? On the non-food prep service, can I stain and then apply a gel poly for protection? I need my kitchen back....I thank you in advance for your reply.
