Kitchen demolition/exposed wiring

I am currently demolishing kitchen cabinets and have four areas with wiring. What is the best way to "park" this wiring until the new work begins.

The wiring is for... oven, cooktop, cooktop overhead fan, overhead light above sink, garbage disposal and very likely two wall plug ins.

The oven, cooktop and fan are moving to new locations. The wiring for the garbage disposal is new. The other wiring is from the 1960s.

The area beneath my kitchen is the laundry room, and the ceiling there is unfinished, so I can see where the wiring goes.

We will be putting new drywall on the wall where the "plug ins" are located.

I am pretty much a novice at electrical work, although I have hung new fixtures and installed GFCIs.

So, can I do this preliminary work myself?
