lime wine - didn't ferment.

My first attempt at wine making was with our backyard plums - from Santa Rosa and Satsumas - turned out fine.

I then tried the recipe that I found on the "net" for lime wine, but it didn't even begin to start fermentation. Perhaps I goofed the recipe - but am also wondering if it may have been the cool pantry that I had it in. We have had some truly freaky weather this winter - very cold for California - so perhaps that was a factor.

As I have oodles of limes growing - would like to try again, but also wonder if the recipe may have been off or misread.

There were 2 recipes - one called for putting the peels into soak - the other didn't mention this. I know - from making marmalade that a lot of pectin is in the peels of citrus, and wonder if the pectin omission in the recipe I tried may also have affected the problem
