ccaggiano, the amount of sugar used in fruit jams is not a safety issue. Traditional pectin needs a certain ratio of pectin/sugar/fruit to jell. An all fruit spread with no sugar at all is still safe to can, the issue is in whether or not it will jell. It has been noted here that "Pomona will jell water", so the sugar ratio isn't an issue. Cut it as low as you like until you are happy with the taste, it'll still be safe. I will note, however, that low sugar/no sugar spreads do not store as well or as long after opening and I've found that no-sugar spreads lose color. This picture shows this year's strawberry jam. I never got sick either, but a bunch of family members got sick from eating my Aunt Midge's pickled mushrooms at a family party once. It kind of takes the fun out of an evening, watching Aunt Esther barf in the bushes..... It does happen, although it doesn't happen often, in my experience. Some cases of botulism do come from home canned foods and some people do die, although not many. The risk is relatively miniscule. Many cases come from the same area, like a whole bunch of people in Alaska that ate badly canned salmon. Others come from commerical items like that Bolthouse Farms carrot juice and the baked potatoes at the restaurant that were wrapped in foil and left sitting on the counter for hours. The "rules" in Canada are different than the "rules" in the United States because we are loathe to take any risk at all, IMO. The extension services do not want the liability of someone coming back and saying "you said it was all right and now I'm sick". I don't think it's necessarily the government's job to protect us from our own cooking, but many people do. The guidelines are extremely conservative, IMO, but very safe. I do not know Canada's testing specificiations, or any other country's, for that matter, so do they know something we don't know or are they more independent or bigger risk takers? Beats me. At any rate, there's a risk, albeit extremely small. Maybe even smaller than that, LOL. I choose to take it, and it's my choice. I'd eat LindaC's jelly too. Oh, that's right, I already have! It's the "don't" part that got my back hairs raised, I'd rather see a "did you know that it's not tested, I just thought I'd let you know" approach. I know I'm late to this discussion, but wanted to add that I also have a now 11 y/o diabetic cat who was dx 3 years ago. My vet of course prescribed Hills Prescription Diet for diabetic cats and this did nothing to help his BG as it is NOT a low carb food. I requested a prescription for Purina DM (another local vet carries Purina Rx foods but not mine), which was a bit better but more than I could afford long term. DM is actually a better prescription food than Hills' (which is HORRIBLE for feline diabetes) as it is lower carb but the vet nutritionist who helped formulate DM recommends Fancy Feast as an alternative. I also tried Wellness and some of the other grain free premium brands and even they still kept my cat's BG too high. My cat has been on Fancy Feast Classic varieties only since 2 months after dx and it didn't take long afterwards for me to regulate his BG. It rarely goes over 130. It is usually in the 75-125 range. He's on Lantus which is an expensive insulin but works well and if you keep it refrigerated and only draw with sterile syringes lasts a long time. ONLY USE STERILE SYRINGES. I use Walgreens brand 30 unit which are around $17 for a box of 100 and are also calibrated in .5 unit increments--helpful for small dosages as we give our cats (my cat is now on .75 unit 2x day which is down from what I was giving him at dx). Make sure to get Classic varieties only. No gravy, shreds, grilled, "florentine," cheese, etc. They all have wheat gluten and other carb sources and frankly are meant to be appealing to the humans who buy them and not the cats who eat them! But almost all the FF Classic varieties are grain and gluten free. In fact, I have to be careful with 1 of the flavors (Cod, Sole and Shrimp) because his BG tends to go too low if I feed it more than 1 or 2 feedings in a row. This is more dangerous short term BTW than high BG. But I can't remember the last time his BG was up over 200. Probably when he got into "contraband" (food for the other kitties). Prior to dx the cats were eating a mix of Wellness wet and CORE dry. As an added bonus, I changed his obese brother's diet at the same time to Fancy Feast and no dry, since they eat at the same time and routinely switch food dishes no matter what I do. At his heaviest he was almost 25 lbs, even when closely watching his calorie intake and feeding only 2x/day (no free feeding)! Prior to changing him to his brother's diabetic diet I was able to get him down to 21-22 lbs. but still far from a healthy weight. He was the one I was afraid would become diabetic, btw. The last time he visited the vet he came in at just under 14 lbs. and she said that he was now a healthy weight. Yes, he is a big cat but no longer obese. Non-fish flavors are the best overall (poultry and beef varieties especially). Unfortunately, my cats are somewhat addicted to the fish flavors plus the 36 can club pack at our local Sam's Club is by far the cheapest I can find them (Walmart 12 can packs next cheapest if I want to get poultry/beef varieties) so I'm aware I'm trading one risk of feeding a fish based diet to my cats for the very real one of losing my cats to either diabetes or other weight complications.

This thread has been very, very interesting to read and although I like to think of myself as a pretty understanding person, hopefully it will remind me that often, circumstances impact how other people behave in ways that won't necessarily be obvious to us. We moved to a new home about a month ago, and noticed that our across-the-road neighbors had quite a bit of random yard furniture and building supplies stuffed into their front porch. It does look rather messy, although it doesn't bother me much (our neighborhood tends to be pretty casual). It was only about a week later that I realized these neighbors were having a new garage built, and had torn down their old garage. Now, I'm sure that's where the front porch items came from and I bet they'll make their way back to the new garage once it is complete. Had I judged my neighbors harshly based on first impressions, I would have not only been unfair to those neighbors but also would have denied myself a potentially good neighborhood relationship. One thing that I do think is interesting is that some people in this thread have mentioned not wanting to form closer relationships with neighbors specifically because they don't want to be held to higher standards of behavior or maintenance (as opposed to simply wanting more privacy, etc.). I'm sure that there are plenty of examples where this is the case, and neighbors will bully their "friends" into conforming with how THEY believe the neighborhood should look and behave. But, I think that more often than not, it's the other way around, and people will be more understanding of individual circumstances when they better know the people involved. My office actually had a workshop-type meeting at work this week led by a professional workplace consultant (not sure of her official title), with the intent to "improve office civility" that touched on this very point. The consultant brought up the example of what happens when someone cuts us off in traffic. Our first reaction, usually, is "What a jerk! That moron doesn't know how to drive." But if we then notice that it's actually a friend of ours, or something that we know and think well of, then we might decide that "There must be something wrong; perhaps he or she is late to something really important, or there's some emergency, or he or she simply made a mistake" or something along those lines. In other words, if we don't know a person, we are more likely to attribute poor behavior to the person him or herself. But if we do know a person, we're more likely to attribute poor behavior to an accident, emergency, or mistake. Of course, that's not the case in many situations, but perhaps it's worth thinking about. If I were in OP's position, I probably would put some effort into rebuilding relationships with my neighbors on a one house at a time basis (although I certainly wouldn't kill myself trying to make nice). But that's just because I enjoy my home more, and feel more comfortable in it (and especially spending time in the yard and garden), when I feel like I have a good relationship with the surrounding families. OP is certainly under no obligation to do so, however--this type of thing is so individual.
