Comments (14)Barb I 've had the butcher take the bones off and tie them back on. Makes carving a whole bunch easier especially a 7 rib roast. Here's the recipe I'm sure it's from someone here but looks like I didn't keep the name. Hopefully someone will put their hand up. It's a delicious side dish and very elegant. Bonus you can do the onions the day before and the beans can be blanched earlier in the day! PS: I plated the dishes so just mixed the onions and beans together but the presentation described in the recipe would be lovely for a buffet. Green Beans With Carmelized Pearl Onions 36 pearl onions, peeled 3 Tbl butter 3 Tbl brown sugar 1 Tbl balsamic vinegar Salt and freshly ground pepper 1 Lb fresh green beans washed and trimmed 1 Tbl olive oil 1 Clove garlic minced 1. Place the peeled onions in a skillet and pour in enough water to just cover 2. Boil over high heat for about 10 minutes ( I boiled 5 mins) 3. Add the butter and sugar and continue to boil until all of the water is evaporated and the onions begin to cook down 4. Reduce the heat to medium. Continue to cook until the onions brown and the sauce reaches a syrupy consistency. 5. Add the balsamic vinegar and continue to cook until it evaporates. Season with salt and pepper. The onions can be placed in a bowl, covered and refrigerated at this point. Warm them before serving. 6. Place the green beans in a microwave safe dish. Pour about 1 inch of water into the bottom of the dish. Micro on high for 5-6 minutes. The beans should be bright green and just crisp tender. Drain the beans and cover with ice cubes. 7. In a skillet heat the olive oil over medium high heat. Add the garlic and cook for 1 minute. 8. Add the green beans to the skillet and toss to coat. Season with salt and pepper. 9. To Serve - place the green beans on a platter- make a well in the center and place the caramelized onions in the well. Onion tip: peel the onions by slitting the root bottom of each onion with a knife. Drop the onions into boiling water for two minutes. Remove them and place directly into a bowl of ice water to stop the cooking process. The skins will come off easily. Comments (18)Sue, I can empathize with you. My first thoughts have always been to the comfort of my guests--making sure they feel welcomed and have whatever they need. But that does not extend to red wine at large gatherings. Actually, DH and I just don't drink wine, but do serve it now and then. I have and will continue to serve red wine to close friends or at a small dinner party, but no way at a larger gathering. I don't feel that it's a choice between risking costly accidents by serving it and being a bad hostess by not serving it. I'm not about to have an expensive silk rug or, like Sue,a $2,000 silk striped chair ruined because someone was careless. Years ago I asked my boss to dinner; he got tipsy and was hanging over my grand piano with a drink--yes, I was nervous and yes, he dumped it on the hammers. Just this past holiday someone stood a toddler on the seat of my ivory striped silk chair and let the child throw candied sweet potatos on my wood floors. So as much as I enjoy entertaining and accomodating my guests, and as much as I assume they will be as considerate of my home as I would be of theirs, some people just aren't. Some are very careful and accidents happen anyway. Comments (9)I do the same as Annie and Lynn. If the people are your close friends, they usually will seat where they are most comfortable. For example, in the winter, the seats closest to the windows are colder, everyone has their favorite spot. The party you are describing sounds like the people might not know each other, or know each other well. Comments (16)Thank you all! the dinner was wonderful fun, the conversation flowed wonderfully and everyone got a chance to have a real conversation with everyone else. DS2 served and the food was very well received, with Golf Buddy asking for seconds and after we had retired to the living room for after dinner drinks and more conversation he asked it he could have another tiny plate! He is a very trim indiviidual who apparently eats a lot of airline food in his work and actually raved about everything., which was unexpected and very nice! I have just a few pictures of the food, did not get one of a filled dinner plate as we were trying to get it out in as warm a state as possible. Here is the trifle: And the cheese tray Crackers were in a long basket made for that purpose.. I think i have a picture of the rolls on my ipad; sometimes with our slower wifi the pictures do not sync to other devices without a little time. After everyone left DS2 and Nephew hand washed everything and dried and I put away. the kitchen is spotless and the table empty of everything except Big Foo and flowers. They were so helpful and I was very appreciative. Nephew is moving to DC in a couple of weeks after a family beach trip so we won’t see him again until Thanksgiving. DS left early this morning and i cant wait to get the full account of his day playing a prisoner, which is filmed in an actual prison!...See Morebbstx
