LOOKING for: ..and I'm stymied

My DH is a heart transplant recipient w/high cholestrol, also has high potassium from time to time which requires careful monitoring since he has only 1 kidney. He's just been diagnosed with diabetes, and I'm struggling to find things he CAN eat. Most all fruits & veggies are high in potassium.

He's a big guy, 6' 2" & just over 200 lbs., so 1/2 cup of rice, etc. just won't do it for him. Anyone have a "like" condition & help with recipes 'til I can visit a Dietician?

I eat nuts and cheese - lots and lots and lots of almonds and still I am losing weight. I also put pecans in my steel cut oatmeal which is the only carb meal I allow myself. I eat only about 10 blueberries a day and that is pretty much it for fruit. I can't eat very many vegetables because I am also hypothyroid, though I do snack on carrots and celery. I eat eggs of course and keep boiled ones around for snacks. I eat some beef jerky for a treat. With only one kidney you want to be sure and avoid things like spinach. What I do is to make all my usual recipes for my family - spaghetti, stroganov etc. and serve mine over a can of green beans while the others have the usual noodles, rice, or pasta. It's not bad. Eating out is hard. Mongolian Woks are a great place to eat. I still go out for teriyaki - I just use the rice to blot the sauce. One thing I have learned is that if I know I want to eat some of the rice, I decide how much and then scrape the rest into the garbage before I even start. I don't know if any of this will help your DH. My problem is losing weight, not maintaining.

oh, and now that there are low cal wraps I am able to have a sandwich again - something I think most husbands would like.

Thank you for your input and this is why I'm asking for help. This is not a small bird. It's the largest hawk-like bird I've seen other than eagles at a distance or vultures. It was the size that first drew my attention to it. On our property, we always get Cooper's hawks. They make nearly a daily hunt at our feeder area so am very familiar with their sizing and this particular bird is easily half again as large as the largest Cooper's I've seen, perhaps twice that size. It is ALWAYS drawn to the pond, totally ignores the birds at the feeders, and they do not appear afraid of it, and instead of flushing from their cover (vines on old trees and large junipers around the feeders) just go about their business. Yes, it's the same bird each time. I'm not seeing one bird take the fish and photographing the other. It was eating the fish when we got the photo below. We are under a very heavy snow cover and rural, with lots of ponds in the area but since our rivers are frozen over, it's a given the ponds are too. Water and fish would be scarce and lots of animals are drawn to our pond since the heavy spring flow keeps it thawed almost perpetually. I could appreciate a fishing bird showing up here under these circumstances when it wouldn't normally frequent our property. The feathers on the back of this bird are dark, with only blotches of white when its back is to you, there is no pattern you can discern other than the faintest suggestion of a barred tail and it's is a muddy brown/grey over dark grey. I'm not looking for a 'rare' bird, but accuracy since I submit birding data and I'd sure like to get this one correct, or I'd just have to log it as unknown.

At one time there was a laminate made of polyester, I believe, that handled and installed like the high pressure melamine. Not nearly as durable as the high pressure, but it looked good for a while. I have not seen any of it for 40 years or more.

Thanks everyone! I've been researching CD fridges all day and haven't found one I can live with yet!!! Couple answers to your awesome questions: @grenhaven - you made me giggle!! The mystery appliance is a wine cooler/beverage center. @sjhockeyfan - yes, the island is 112 inches, including 5 inches of overhang on the side. We may just have to lose that. Also, we don't have the option of customizing our cabinetry to extend out the depth of the fridge. :(. We are building a semi-custom home and have several limitations. @tomatofreak - after hours perusing here, I've learned many people happily live with less than what the experts recommend. But, your experience is exactly the type of information I'm looking for. @annkh - Nope, I have the dining room on other side. But, my GC is recessing all the plumbing stuff!! :) Keep all advice coming, love it!! Would love to see pictures too!! Thanks!!

Gwentm - thanks so much! We put several of the pocket doors with glass inserts throughout the house during the remodel/addition, and they were all from Lemieux. We compared doors from several companies and felt that they had the most competitive prices of all we looked at. We're happy with the doors, although not the installation! Our contractor installed them incorrectly, so now we have scratches in about 3 places on every door where they rub sliding into the wall, so will have to be re-installed and repainted - argghhhh! But then I shouldn't be surprised, since the quality of his work took a nosedive toward the end, that is, when he even bothered to show up! :) Good luck - hope you find the door you are looking for! Rice makes my DH's bloodsugar skyrocket. He never eats it anymore.It does the same thing to some of his diabetic co-workers.
He's 6'4", and except for a bit of middle-aged gut has always been on the lean side.
He's a peanut fiend as far as snacks go, also likes to munch on pepperoni. Something he likes that's very easy to make are what I call pepperoni chips. Arrange pepperoni slices on a couple layers of paper towels on a plate, then zap in the microwave til crispy. Time will vary by wattage and how many slices you zap, usually a minute or less for me for a plateful.
Another thing I've made is "crispy cheese". I saw it done once as a salad topper using Parmesan, but I tried it with shredded cheddar and it worked too. Preheat the oven to 375 and spray a baking sheet lightly with PAM, then sprinkle on shredded cheese and bake @ 10 min, til edges are lighly browned and cheese is crisped. I've also tried this in a nonstick skillet, results differ a bit, but it was pretty tasty too.
