Chmney repair contractor upped completed price $300 over estimate

I hired a contractor to repair my chimney and he gave me an estimate, in writing, of $675 to replace cracked bricks, repoint mortar and install stainless steel flu cover. After 2 days, he completed job and told me it would be $300 more than he estimated. Told me he replaced more bricks than planned(60 vs 15), and bricks were solid vs holes in middle, making them harder to remove. He also applied Thompson Water Seal to upper section of chimney. I paid him $675, after he mailed me an unsigned contract for $975, after completion. He only considers this a partial payment. What is reasonable here? The job appears to be well done.
