I can't think of a window treatment that would give privacy but not block the airflow. Another issue to consider is that the window treatment would soil easily with the windows open.

You might consider washable pinch pleated sheers on a traverse rod. Open them when you want air, close them when you want privacy.

Wooden shutters would provide privacy and allow breezes thru. If cost is a factor you might try to find a source of used closet shutter doors.

I have used the Faux Shutters, for breeze through shade, they were fine for the purpose but rather fragile and didn't last long. My expensive exterior wood shutters have worn out too, so I have been looking at these screen options for replacement. Wish more were being designed.

Matchstick blinds in a natural tone would go well with the wood ceiling, brick and stone.

I love jalousie windows, but it's been so long since I've seen them that I can't remember if they have screens. If they do I'd think about changing the screen instead of finding window treatments that would block that much needed breeze. We recently changed our standard fiberglass screen to solar shade screens. During the day you can't see inside unless your nose is pressed up against the screens. At night when lights are on behind something you can see shadows, but if lights are between you and the window then you still have complete privacy. We got ours at Lowes last year, but noticed this year they only carry them in one size, 36" x 84" and are a different brand. New York Wire and are called Sun Guard 90. I believe they were about eight dollars a roll.
