Replacing ceramic tile backsplash

I'm in the process of replacing all the ceramic tile backsplash in the kitchen. It goes from the granite countertop to the bottom of the cabinets, behind the range, and between the counter and windows behind the sink.

The original ceramic tile was adhered directly to regular drywall.

I gently pried off all the tiles. I found the easiest way was to remove the grout and then pry either side using the other as a base, and then flipping them off with a spatula.

However, about 30% of the walls have torn carboard, and about 10% actually have chunks of drywall missing. In a few areas you can see the back surface carboard.

My question is... should I simply cut out the drywall and replace it (if so, what type should I use, and is Green or moisture resistent the same thickness), or simply patch it and prime it with a good sealant. Most of the damaged areas will be behind the new tile. However, I'm concerned about moisture getting behind it. Also, if I patch it all, I'm concerned about it not being perfectly flat.

Any suggestions.
