Need HELP with beam covering!!!!

We are in the last stage of our reno which expanded our den to 15' (from 9'). We decided in the beginning to cover the support beam but I am not keen on the options now that its time to make a decision.

Because of the expand/contract that will be going on at the peak, we believe sheetrocking is not a good option. Our contractor has recommended a white board stuff but while it comes in 16 lengths, it does not have the height we need to go to the ceiling from the bottom of the beam, so he has recommended either crown molding or a flat trim that will cover the gap - I am a fan of neither.

I wanted just a white beam with nothing to draw attention to it - i just want it to blend in with the ceiling. Any suggestions? The beam is 12" high,15' long, and about 5 deep. Here's a pic with a sample of the covering suggested by my contractor.
