Backsplash: WWYD? (Revisited)

It seems hard to believe, but it's been several months now and we still haven't chosen a backsplash. I haven't taken any updated photos, but we've placed orchids on the windowsill and various kitchen items along the counter, so the place feels nice. That said, it's time to get moving again and pick a backsplash (for the love of Pete!) so I can get on with the styling and finally call our remodel complete.

Last time I asked for your opinions about what to do, I presented two specific options that we were considering. I have now nixed the hub's idea and he has nixed mine, so we're starting from the drawing board. What a better time to seek your advice?

So, if this was your urban Seattle kitchen, what kind of backsplash would you put in? (For what it's worth, I'm not worried about the backsplash being magical; I'm pretty confident about my styling abilities and plan to pull together a look with accessories).
