That sounds delicious! I made pork tenderloin in the crockpot, steamed veggies and baked potatoes. It was very good and there're leftovers for tomorrow. Bettye/AZ

I made a stir-fry using pork tenderloin, a bag of broccoli slaw, and some green onions. I used some soy sauce, garlic, ginger and hot chili-garlic sauce for flavoring. Served it with ramen noodles and egg rolls.

It's pretty much beer cheese soup with broccoli. I put2 T butter in my Lec Dutch oven and add 1T chopped onion and 1 T chopped celery and about 1 T chopped carrot...about could be more not less. When veggies are soft add 1T flour...stir and cook a minute or so...add 2 cups or 1 can chicken broth ( 2 cups of home made is better!) and simmer for about 10 minutes....during this time add about 1 1/2 cups chopped cooked (or frozen) broccoli...cook until the broccoli is done, Add a can of beer and bring to a simmer... Add 8 oz of the sharpest chedder you can find...grated....and 1/4 cup grated parmesan....heat until cheese melts and serve. Do not boil! or the cheese will turn into clods! Linda C

I nearly always make a family-size batch of soup and freeze the left-overs in individual containers. Really nice to just grab a bowl of soup out of the freezer. One thought, though, milk based soups tend to separate and don't look so great, so I rarely freeze them.

OK girls, I'm seeing more snow than I ever wanted to see again and they say more is coming...oh well, it's my mom and I'm sure she put up with unpleasant things for my sake, to I'll just suck it up! She had a bad spell last night....I think she might still be grieving, so I just hugged her. She said she told the Lord He could take her any time, that she was ready, but maybe He better wait awhile cause all the family just got home from this funeral and they needed to rest. Plus, my nephew, the funeral director is on vacation. She can be so funny. Rosa, Thank you for the compliment....I sure played with the lengths and widths a lot, plus changed them as I sewed when I got in little tight places, too. I live in what I consider a small town, too, but I think there are 5 lights on the main drag from one end to the other. I like this better, but it's the pits for fabric shopping. I'm with you, Sally. It's always good to get home...and in my case, be it ever so humble. Deanna, I know you're having fun using your new machine. You'll get used to it and it's settings, etc and be whipping those perfect blocks out in no time! Last year when I was up north, I gained 10 of the 25 I had lost and I haven't taken it off, so yes, I do need to be careful. Here is one I found that doesn't have beans, but it doesn't have rice, either! LOL Easy enough to toss some in! Quick Taco Soup Soup Ingredients: 1/2 pound extra lean ground beef 2 medium (1 cup) onions, chopped 1 large (1 cup) green bell pepper, chopped 1 (1.25-ounce) package taco seasoning mix 1 (46-ounce) bottle vegetable tomato juice 1 (16-ounce) jar thick and chunky salsa or picante sauce Toppings Ingredients: Fat Free Sour Cream, if desired Shredded lettuce, if desired Sliced green onions, if desired Chopped tomato, if desired Reduced Fat Cheddar Cheese, shredded, if desired Cook ground beef, onions and green pepper in 4-quart saucepan over medium-high heat, stirring occasionally, until beef is no longer pink (6 to 10 minutes). Drain off fat. Stir in seasoning mix; continue cooking 1 minute. Stir in tomato juice and salsa. Continue cooking, stirring occasionally, until heated through (3 to 5 minutes). To serve, ladle soup into individual bowls; dollop with sour cream, if desired. Top with shredded lettuce, sliced green onions, chopped tomato or cheese, if desired. I was just coming home from the country, didn't know when Dh would be getting done work (never do these days, with the terrible overtime they're working)--so when he got home, we just ran over to Panera Bread. I had French Onion Soup, he had a sandwich.

Love that Taco Soup! Night before last I had the last that I had in the freezer. Won't be making it again until Fall.

Tonight I had cereal. I had been to PT, and then to the P.O., $General, Salvation Army Thrift Store, and finally to WalMart for a few things I needed. By then I was too tired to think of anything except a bowl of cereal.

While Survivors was on, I had a piece of pecan pie that I made yesterday.

You know Kat you made me stop and think what did we have? LOL My memory is horrible. We had pork chops, stuffing, wild rice, peas and applesauce.

Taco soup sounds yummy. How do you make it?

I had planned to make baked chicken with baked potatoes wrapped in bacon and sprinkled with garlic powder/salt and fried summer squash. DD was complaining about her ear so I took her to urgent care instead of cooking and we had Wendy's. Tonight's meal is all planned. I just need to get it in the oven in time to eat.

I buy frozen mix for taco soup at Cash and Carry warehouse! I'M LAZY! Same supplier as the restaurants and it's a family favorite!

Here's Weight Watcher's Taco Soup:

Weight Watchers Taco Soup
Ingredients
1 lb. ground turkey or lean beef
1 large onion, chopped
1 (1 oz.) package Hidden Valley Ranch Dressing Mix
1 (1 oz) package Taco Seasoning Mix
1 (16 oz.) can pinto beans
1 (16 oz) can chili beans (either hot or regular)
1 (16 oz) can whole kernel corn
1 (8 oz) can Mexican-style tomatoes
1 (8 oz) can diced tomatoes (any flavor)

Directions
Brown meat & onions and drain.
Mix Ranch & Taco seasonings into meat.
Add rest of ingredients, undrained to mixture.
Simmer 1 hour

2 Weight Watchers points per cup.

Here is the Taco Soup recipe that a KTer posted a couple years ago; sorry I don't remember who it was.

Almost the same as WW.

TACO SOUP
1-2 lbs. lean ground beef
1 small onion, chopped
1 (4-oz) can chopped green chilies
1 package taco seasoning mix
1 package ranch dressing mix
1 can corn, undrained
3 cans stewed tomatoes
1 can kidney beans, undrained
1 can pinto beans, undrained
1Â½ C water

Brown meat with chopped onion; drain; add remaining ingredients and simmer at least 30 minutes; longer if desired. Great served with shredded cheese and cornbread or Mexican chips.

(I only use Â½ can of chilies.)

Makes a lot, so I freeze 1 serving sizes.
