Dotmom needs your thoughts....

This is dirt_yfinjgernails, Dotmom's DIL. Dottie just received the terribly sad news today that her youngest son, my DBIL passed away this morning. He was a wonderful son, brother to my DH, uncle to his nieces and nephews. He has a marvelous wife, Pam who is more concerned about Dotmom and Dad's well-being than her own. It is hard with the distance between us all, but so wonderful to have the loving family closeness. This is so terribly sad for Dotmom, dad, and my DH. Please send thoughts if you would.

Pattico....how very nice for you to ask. He is doing pretty good. Some days are better than others. I have to tell you-all about how terrific the company he works for. When DFN first got sick, last November, he offered to use up his vacation time when he needed to take time off to tend to her. They told him to not worry about it, that he will be covered. That is a company with a heart!!!! He went back on air full time the Monday after her funeral, and it was hard. He of course, had to be up-beat and jovial when on. After a couple days one of the guys there asked him how he could do that and Scott with his usual sense of humor, told him it was just like sex....he fakes it. First, Jewels,...yes, it could have been much worse...she might have had a head trauma or broken neck...there is always something to be thankful for. But as a grandmother of a die hard soccer granddaughter, I know how important the game is to them and yes, soccer is a very aggressive sport. I would at least discuss this with the coach or AD and see what might be happening between the girls...and if your dd is the only one who is getting excessive abuse from her teammate. If I remember correctly, your dd has a scholarship to play college soccer and I hope this does not ruin her chances for that. My grandson also had a good chance for playing college soccer as well, but due to knee accidents, he was not able to do so and it broke his heart. He is the college soccer team's manager, but that is not like the thrill of playing. Good luck to your dd!

The mid tone floor that you have now is best for your space. You could go a bit lighter but grey floors are not really transitional. They will greatly limit your use of colors in the future. Midtone wood floors like the color you have are the most neutral and timeless. You could go a bit lighter or darker, but be aware that the very light or dark floors require more upkeep. Also if you dislike the red tones, stay away from cherry or red oak. What exactly do you not like about your existing floors?

Just made bone broth on ham hocks; need your thoughts.

Else, don't toss it out! I make soup beans and hamhocks for DH (ok, and myself!) that takes 2 days... 1 day for the ham stock, 1 day for the soup beans. This is a very Southern way to cook soup beans, and adds layers of flavor. This was very new to me, but after much practice, I've found the ham hocks and bones add better flavor than a meaty hambone. I only use this stock for my old fashioned soup beans. I've never used smoked hamhocks, and never simmered 48 hours (usually 6-10 hours), and the veg I add are the same (no vinegar) plus bay leaves as you used. Also whole peppercorns and parsley, and yes, it's then strained. The broth is a medium brown and perfect to cook a large pot of Great Northern Beans... the saltiness in the broth seasons the beans (I can't abide beans with no seasoning). I clean, then soak the beans overnight, drain, and add the hamhock stock to the beans, covering plus 2 inches. Also toss in chopped onions, chopped carrots, minced garlic, celery, and of course put the ham meat back in to your stock pot. Bring to a boil, reduce to a simmer for 3-5 hours. Do not add salt of course, but prior to serving fresh cracked pepper to taste. I also use a potatoe masher and mash some of the beans for thickness, or you can add a bit of water/flour to thicken. If you've an instant pot, you can greatly reduce your time. I actually add another layer of flavor but I'd be kicked off GW for good! It's just a rich gravy added 30 minutes before serving : ) Now, not sure if the stock is workable after 48 hours of simmering, but I'd give it a try! I don't think the smoke flavor will hurt, and may add some depth. Worth a shot... : ) Oh, for 4 ham hocks' worth of stock, I use 1 lb great northern beans. Add water if needed.

Dottie, my heart goes out to you and your family. I lost my son--my only child--on May 5, 2006 (tomorrow will be the second anniversary of his death), so I know the pain you are feeling. It must be some comfort to know that Brian did not suffer, but the most comforting news is that he knew Jesus, and you will re-unite with him one day. If you need to "talk", I am here for you.
